Custard Pie III

I loved it. It was creamy and light, but it wasn't so light that you could tell it was a healthier version. I varied the recipe, making it low fat/fat-free. The changes I made were: non-fat evaporated milk and non-fat milk, 2.5 tbsp. of margarine, a little less than a cup sugar (I don't like over-sweet desserts), 1.5 tbsp. of vanilla and no cinnamon at all. I really like my version, but I could imagine how much creamier it would be w/ the orig. recipe.

Oatmeal Raisin Cookies I

Very soft and tasty. I used only one brick of margarine and 1/4 canola oil, though I wasn't sure if that made it a little healthier, but these are my favorite oatmeal cookies ever. After I baked half the batch, I put in a little over a cup of chocolate chips to the rest of the batter and they came out soooo good!

Creamy Hot Chocolate

It was so tasty, delicious. Not too sweet at all. So convenient to make this and leave the leftovers in the fridge. I made it today since I wanted to taste it and if it was good enough, I would make it for my family on Christmas. It will be on my menu for Christmas for sure!!

Seven-Up™ Cake II

I loved this cake, though it was a little heavy, but it was very delicious. My family loved it. What I did different: first, I used only 2.5 cups sugar, since I don't like anything oversweet; second, I used 2 tsp. lemon juice; third, I misread the recipe and poured in the ENTIRE can of 7 up. I even used DIET 7 up!! I was so worried the cake would not rise, that it would be too liquidy. WRONG! It was just wonderful!!!

Tasted exactly like the recipe my mom-in-law gave me. Very tasty. Needed more flour to the dough since the dough gets very sticky and hard to handle. Simple ingredients, though req'd many steps to get the end product, but well worth the effort, time, and energy. Used half tbsp. of both vanilla and almond extracts. Yummy. Next time I will try to dip them in melted chocolate!

Zucchini Bread V

You're right. This recipe is very different than all the other zucchini bread recipes. I'm sorry, but my family didn't care for this one, esp. the raisins. It was very moist; I would give it that much, but we didn't care for the ginger taste; seems to dominate the overall taste of the bread. We will stick to the other traditional recipes. Sorry.

Sophie's Zucchini Bread

I varied the recipe by baking it in a bundt pan instead. I set it to 375 and baked it for 50 mins., which was fine, but I wasn't too pleased that the cake wasn't fluffy, but densed.
