Fiery Fish Tacos with Crunchy Corn Salsa

Really good! I followed some of the advice and used Tony Cachere's cajun seasoning on the fish instead of the cayene and pepper. I also added a drizzle of olive oil to the salsa, used parsley instead of cilantro (what I had), subbed green apple for jicama (wasn't available at my store), added a dash of cayenne to the salsa, and squeezed a little bit of lime juice over the fish before I cooked it. I cooked it on the stovetop using a grill pan.

Shrimp and Broccoli Fettuccine

Really good! Like a lot of others I couldn't find the lemon and herb cheese, but got the Italian and herb and it worked out just fine. I also added a few dashes of red pepper flakes. Since my husband doesn't like tomatoes but I do I subbed half the tomato for chopped bell pepper and sauted it all together with the garlic and shrimp. Easy to pull together on a week night!

Slow Cooker Chicken Stroganoff

So easy and a great slow cooker recipe! Resist the urge to add liquid in the beginning - it really does work as is. Left this recipe for my husband to do while I was out, but he accidentally added a packet of ranch dressing instead of Italian dressing...whoops! I added the Italian dressing packet as well when I got home and it turned out great. I also added a package of frozen peas and some chopped carrots, and served it over egg noodles. Next time I'll have to try it sans ranch to see the difference.
