Quick Brownbag Burritos

As a single parent of a newborn, I am always looking for good tasting, healthy and quick meals because they are hard to find. This recipe takes the cake. The leftovers made wonderful work lunches. Thanks!

Jimmy Dean Breakfast Casserole

I made this for a brunch baby shower and it was a hit. It’s much better than the traditional Christmas breakfast casserole I’ve made before. A couple of changes: I used maple-flavored sausage, cubed and toasted an entire French loaf of bread, upped the eggs to 15 and milk to 4 1/2 cups and omitted the tomatoes and replaced with red bell peppers. (I had quite a few to serve.) My casserole took a bit longer than the 60 minutes – just watch yours carefully, but it was hearty and scrumptious!

Lemon Poppy Seed Bread

Oh my gosh! How could anyone not give this five stars? I love the topping! Everyone keeps asking me to make it again. I just used a very large loaf pan and baked until toothpick came out clean - app. 1 hour. 10 min.

Chicken Enchilada Soup II

Yum, yum, yum! Everyone raved about the soup. I think it tastes better than the Chicken Enchilada soup served at Chili's. I topped with Lime flavored tostada chips, cheese and diced tomato.

Carol's Chicken Salad

Not sure how I feel about this recipe. It’s good, but I think I can find a better one. I will decrease the poultry seasoning in half when and if I make this again. I followed the recipe exactly with the exception of using green onions and adding chopped walnuts. I served the salad in wheat pita pockets.

Bread and Celery Stuffing

This was my first time making homemade stuffing and it turned out surprisingly wonderful! I wanted a simple recipe, but I forgot I had maple sausage in the fridge that I wanted to use. I let French baguette cubes air overnight before I toasted the bread for several minutes the next morning. In addition, I simply fried the sausage with celery/onions and omitted the butter. I also opted to bake in a buttered casserole dish instead of the Turkey. The finished product was wonderful and tasty. It was the only thing my finicky 7-year-old nephew would eat on Thanksgiving Day

Spinach Tomato Tortellini

Recipe was nice, but not great like all the rave reviews . . . definitely not a restaurant quality recipe. I thought it a bit bland. In my opinion, this isn't a "must make again" recipe.

Yummy! Fresh basil and home-grown tomatoes are a must! This was a nice dish to serve on such a hot, humid midwestern evening. I paired it with a crisp salad, garlic bread and a glass of Merlot. Leftovers were even good cold the next day. I will most certainly make again!

Ground Beef Enchiladas

I absolutely love this recipe! However, I made a few changes to use up some things in my cupboard. To make clean-up easier, I sprayed the dish with PAM, used 1 small can of green chilies instead of a jalapeño while browning meat, 1 c. of sour cream instead of yogurt (I didn’t have any yogurt in the fridge) and 1 can of enchilada sauce. I dipped each WHEAT tortilla into the sauce before filling. I also poured remaining sauce over enchiladas before I baked. WONDERFUL! This tastes better than a local caterer's recipe. Well done. Also, made these again and topped with fresh chopped cilantro and black olives when the dish came out of the oven. Yum!

Incredibly Easy Chicken and Noodles

This recipe was okay, not wonderful. I liked the taste of using frozen noodles; however, my finished product came out a bit too soupy for my taste of “chicken and noodles.” Moreover, we had a lot of leftovers. Don’t know if I’ll try again or test a different recipe.

Chicken and Biscuit Casserole

I thought this recipe was quite good. It made wonderful comfort food on a cold Sunday day. I couldn’t resist doubling the veggies and chicken. I also substituted parsley for the basil – simply because I didn’t have any basil in the cabinet. It turned out nice. I even think the leftovers were better the next day.

Chocolate Turtle Cheesecake I

I thought this cheesecake was too rich and dry. It’s not anything to rave about. I’m disappointed that my time and ingredients didn’t give me a better product. Sorry everyone, it only gets 3 stars from me.

Cinnamon-Roasted Almonds

WOW! I changed the recipe slightly as suggested. Try doubling the topping as follows: ½ cup sugar; ½ cup brown sugar; ½ tsp. salt; 1 tsp. cinnamon AND 1 tsp. of vanilla. This slight change makes a world of difference and definitely moves it from a 4 star to 5! Yum!

Spicy Chicken Breasts

Wowza! I was sneezing throughout the entire mixing process. Take heed: this recipe makes a lot. Rub was good, but I feel the thyme overpowered the blend. (I’m not a big fan of the herb.) Next time I will decrease to ½ Tbs. and keep the rest of the ingredients the same. I love the fiery/hot taste mix gave my poultry. It was even good in my salad the next day.

Shrimp Scampi Bake

This scampi was quite tasty. I headed the advice of others and baked the dish for a shorter time - 9 minutes. For an appetizer there amount of sauce if fine, but if you want to serve over pasta I'd double the sauce ingredients. I think next time I'll serve this as a side and make grilled steak as my main entree.

Cheddar Bay Biscuits

Simply wonderful. I used extra SHARPE cheddar cheese instead to give it an extra kick. I served rolls with shrimp scampi and salad. My boyfriend raved . . . again. :) Thanks!

Famous Butter Chicken

I made the mistake of listening to a reviewer and gave this recipe a chance! Can’t understand where all the five stars came from. In my opinion, it was a waste of good chicken. There was NO taste to the chicken other than melted butter and buttered crackers. Yuck! I substituted garlic salt for real garlic and cooked breasts entire 40 minutes. (They were thick breasts from the butcher). Am really disappointed and will never make again.

Sour Cream Coffee Cake I

Don't know where all the rave reviews came from. It was okay – not great and I didn’t get any compliments. I guess I was looking for something similar to the sour cream cake sold in the local cafe. Will not make again.
