Cathy's Banana Bread

Reviewed: Feb. 9, 2012
This will be my go-to for banana bread! I swapped out sour cream for plain non-fat yogurt, margarine for butter, white sugar for just 1 cup brown sugar, dusted greased pan w/ cinnamon-sugar mixture, and topped with a streusel as suggested by another member (1/4 cup brown sugar, 2 TBSP flour, 1/2 teaspoon ground cinnamon, 2 TBSP melted butter). Baked 1 hour at 350, then 20 minutes at 300. Perfect every time! Thank you!

Congo Squares

Reviewed: Feb. 10, 2012
Just as good as they were when my mom made them for me growing up. I cut the 3/4 cup butter down to 2/3 and baked at 350 instead (still came out plenty gooey), but left it alone other than that. Wonderful recipe!

Cinnamon Coffee Cake II

Reviewed: Feb. 1, 2012
I got brave and used a yellow cake mix that already had pudding in it (Pillsbury), then still used 2 packages of vanilla instant pudding mix. My friend (who likes her cake super moist) loved it. Definitely baked for an additional 45 minutes at the end. Amazing recipe, thank you!

Too Much Chocolate Cake

Reviewed: Feb. 14, 2012
Subbed in plain, non-fat yogurt for sour cream, cut oil to 3/4 cup, chocolate chips to 1.5 cups (flour them so they don't sink), and used a 3.9 oz. instant pudding package. Baked at 350 for 30 minutes, then turned down to 325 for 25 minutes. Came out perfectly moist, but not too mushy. Filled the hole in the center with chocolate-covered strawberries made using the same Satiny Chocolate Glaze I topped the cake off with. The recipient (a total chocaholic) declared it "lethal." Will definitely make again!

Flourless Peanut Butter Cookies

Reviewed: Aug. 1, 2012
Deliciously chewy and easy to make. Followed the advice of other reviewers and added 1 tsp vanilla and changed the sugar to 1/4 cup white, 1/2 cup brown. Made these small so they aren't too overwhelming! Love them.
