Eggplant Tomato Bake

Reviewed: Sep. 4, 2002
I thought this was delicious! I did it a little differently though. I layered it this way: eggplant, parmesan, tomato, pepperjack cheese and topped with basil. This is a great variation.

Chicken Fajita Melts

Reviewed: Jan. 22, 2009
very good! I added sliced avocado and sliced tomatoes underneath the chicken mixture and added extra cheese. I also used rye bread which turned out yummy! One tip: toast the bread on both sides under the broiler so it won't get soggy when you add the toppings.

Black Friday Pie

Reviewed: Dec. 24, 2008
This was a great wa to use up all those Thanksgiving leftovers. Instead of plain green beans I used the rest of a green bean casserole we had the night before. This gave it al lot of flavor. Also, topped with shredded cheese. YUM!

We BBQed this one and the chicken was very juicy! I loved the sour cream marinade. We didn't put cheese on top and it was still great!

this was very good. I did follow another reviewers advice and mixed the melted butter with the breadcrumbs. I also, added parmesan and chopped slivered almonds to the breadcrumbs. I baked it at 400 for 30 minutes and that was perfect!

Marinated Flat Iron Steak

Reviewed: Jun. 9, 2009
Marinade was excellent! I marinated for over 24 hours and the taste was amazing. It is a little sweet but a good change from the norm. Also, the meat turned out very tender. I will be making this again.

very good on crackers. I didn't add the Jalepeno (didn't have one) and instead added crushed red pepper. My husband loved it!

This was a very easy recipe, when short on time. I thought it was very good, just a tad bland. Needs some kick.

Fiesta Beef Soup

Reviewed: Dec. 24, 2008
good, easy soup. great weeknight meal. I made a couple of changes though: added more garlic (2 more cloves), sliced jalapenos, I drained the beans, 1/4 c. finely chopped bell pepper, 1 c. small pasta and about 1/4 c. salsa. Also, doubled the beef broth since I added the pasta. Topped with sour cream, shredded cheddar cheese, crushed tortilla chips and some fresh lime juice. It was very good this way!

This recipe was a little bland. I even added ham, cubed cheese and celery and it still needed more flavor.

Napa Cabbage Noodle Salad

Reviewed: May 14, 2011
Made this for a dinner with some friends. We all really liked it. The things I changed were: I added less sugar, more soy sauce and more white wine vinegar. I thought all that sugar made the dressing a little too sweet. Also added shredded carrots, green onions and sunflower seeds.

Buffalo Chicken Dip

this is the best dip ever! Everyone was raving about it and there was none left over at our New Years party. The only changes I made was that I used 1/2 the chicken and topped it with blue cheese crumbles and minced celery.

Quick Poached Salmon with Dill Mustard Sauce

this turned out perfect. Loved the sauce. I used dried dill instead of fresh and added more lemon juice. And I didn't have shallots so just sliced up a sweet onion. Will be making this again.

this was wonderful! the only changes I made was used 2 T butter and 1/2 cup fresh lemon juice in the sauce and it was still outstanding. My husband raved about it through dinner as he gobbled it up and went for seconds :) This would also be a great dinner for company. Definitely a keeper!
