Favorite Bourbon Pecan Pie

Wow! I've been using a recipe EXACTLY like this for the past 6 years!!! I also use the same recipe to make mini-pies to pass out as thank you treats to teachers & friends around thanksgiving. Everyone raves about it. If the pie is jiggly /runny, cover the pie with foil and let it bake longer. The bourbon flavor mellows out, and makes this pie even better the next day.

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Wow! These are great! I followed the recipe all the way exept I didn't have strawberries so subed it w/ 1/4cup of cranberries & 1/4 pecans. The muffins were sweet, light and moist! What a great healthy muffin recipe, you wouldn't even know it!

Pinto Bean Cake

I can't believe this is so good! it tastes like a really good moist spice cake. Such a great healthier alternative to traditonal cakes. My kids & my husband LOVEd it! Made 2 of them in a week. Thanks for sharing the recipe...really... THANK you.

Mexican Casserole

This is a great easy recipe. I added 1/2 cup to the bean mixture. I used leftover homemade beans & shreded leftover chicken breast to each layers. My family loved it. Great recipe to use up leftovers w/ & to make ahead.

Ethiopian Cabbage Dish

I'm from Eritrea & my mother grew up in Ethiopia. This is the most accurate & authentic recipe I've found. As other reviewers suggested, I doubled the spice & reduced the oil as well. FYI - Ethiopians use a lot of oil b/c most don't have non stick pans so they're in the habit of poring on the oil.

Ninety Minute Cinnamon Rolls

You just can't beat this recipe. EASY & DELICIOUS! Ofcourse since it took so little time to make, I had to make a 2nd batch for an afternoon snack. My boys were loving me!

Fresh Mint and Cilantro Melon Salad

I was so sceptical - I only tried this recipe to use up the mint in our garden & the not so ripe honeydew. I tasted the fruit each time I added the mint & then the cilantro. Wondeful! the only subsituted honey for the sugar, and used cantelope & watermelon along w/ the honeydew to add color. Thanks for the recipe - this is a definite KEEPER!

Blueberry Scones

Wow! I just made these scones and they came out perfect. The dough was definetly sticky, but I took another reviewers' attitude and ignored the stickiness. It came out great. I did use white sugar instead of brown sugar and added 2 extra tablespoons of sugar. I subsituted 1 of 2 cups of flour with Whole Wheat flour just to make it a little healthier and the still came out light. This is a keeper.

Sunday Dinner Rolls

Talk about the easiest recipe! No kneading and the rolls came out soooo wonderfully soft! The only thing is that it was a bit sweet for me, so I'm going to cut the sugar in half next time. This one is a keeper!

Easy Pancakes

This is the best and easiest pancake recipe. I've made 3 times already. I added ripe bananas and reduced the milk for 3/4 cups for a wonderful banana pancake that my hubby & 1 year old just wolfed down. Thanks!

Ethiopian Chicken

This is definetly NOT Ethiopian chicken. Being of Ethiopian descent I was wandering how the ingredients were going to come out having an Ethiopian flavor... well it didn't. So if you're looking for Ethiopian this isn't it. The soy sauce should have been a dead give-away. As for the taste of the dish itself, I thought it bland as well.
