Tomato-Rich Fish Stew

This stew is sooo good. I used fresh basil and thyme (along with dry rosemary) and added shrimp, little necks and scallops along with tilapia. My husband and I really enjoyed this hearty, healthy meal and will definitely make it again.

Ninety Minute Cinnamon Rolls

I have always been intimated by any kind of recipe where dough is involved until I made these absolutely yummy rolls (watching the video was extremely helpful)! After reading other reviews, I used a 9 x 13 glass dish and baked the rolls for 20 minutes. I also added chopped pecans to the cinammon/butter/brown sugar mixture. My husband gave them 5 stars!

Italian Cookies I

Was looking for a recipe for Italian cookies and came across this one. Believe adding 3 tsp anise (rather than vanilla) really makes the cookie taste oh-so-good. Make an icing with confectioner's sugar, milk and 1/2 tsp anise mixture, then sprinkle with red sugar and you'll have great cookies.

Mediterranean Greek Salad

The perfect summer salad! I added red wine vinegar and some olive oil as suggested by others and the result was amazing. A definite go-to dish.

Cappuccino Muffins

Yummy muffins that can be even better with some minor modifications mentioned in other feedback. First, definitely need at least 5 teaspoons of coffee granules; I also added some to the topping. Secondly, using canola oil is a great idea instead of using butter. I used chocolate chunks in mine and the topping is not-to-be-missed. Will make again and again!

Soft Oatmeal Cookies

Really great oatmeal cookies. As noted in other reviews, to keep cookies soft cook for 8 minutes and be aware that cooking time can be affected by the cookie sheet you use. To make these cookies even better I added chopped pecans, cranberries (chopped them up in the food processor) and chocolate chips to the batter.

Apple Streusel Muffins

Yummy apple muffins...I made them in mini tins and included crushed candied pecans in the topping. Remember to let butter cool prior to adding to batter.
