My favorite things to cook
Mostly healthy vegetarian meals. I'm very dedicated to eating healthy and feeding those I care for healthy delicious meals.For my family members that are meat eaters I like to make many chicken recipes, such as garlic chicken, yogurt marinated chicken, or lemon chicken with rosemary.
My cooking triumphs
I make some delicious falafel,soups, and garlic chicken.

Cookies that come out paper thin when baked.

Zucchini Bites
These were a big hit! Added about 3 more strips of chopped bacon, grated a half of a squash with the veggies, 2 carrots instead of 1, 2 cloves of garlic chopped, added 1/3 cup of shredded cheddar cheese, 1/2 tsp. chilli powder, and 1/2 tsp. of oregano. My mom and little brother ate these up and the aroma was fantastic!

Baked Falafel
This falafel came out great! I don't own a food processor so I finely chopped the onion and garlic. I added a little bit of salt too for more flavor. I then combined everything in a bowl mashing it with my hands and rolled them like meat balls on a pam sprayed cooking sheet. Baked them at 400 degrees for 20 minutes. Make a yogurt dipping sauce or put them in a pita pocket with hummus, tomato, alfalfa,lettuce,sunflower seeds and cheddar cheese. YUM!

Sugarless Fruitcake
Came out delicious! I'm always looking for a healthy alternative to dessert and this was fantastic. Plus it's completely vegetarian friendly. I used just what I had available in the house. I substituted California raisins for the cranberries, used splenda packets, and left out the coconut flakes. So delicious and guilt free.
