Famous Butter Chicken

This was a huge hit, even for my picky 8 year old. I used 1 sleeve of reduced fat Townhouse crackers, 1/8 cup flower and 1/8 cup of italian seasoned bread crumbs. I used a plastic bag to "shake and bake" a couple at a time. I used boneless breasts, each cut into 3 pieces so they'd be pick-up-able for the little one (cooked about 35 min total). They were very moist and delicious! I turned them twice during baking and amp'd up the heat to 425 for the last 5 or so minutes to get them a little crunchier. I served these with cauliflouwer mash and the Chicken Gravy from this site. Even though I didn't feel healthy eating this, I know I will make again! Worth it :)

Chicken Gravy

This was quick and easy. I used chicken broth and this was super easy and delish. But, I suggest cutting back on the amount of poultry seasoning - you can always add more. 1 tsp turned out to be too much for me, so I added a can of turkey gravy I happened to have on hand to tone it down and it was perfect.

Candied Kielbasa

Yum! So simple and loved by all. Great for a man-centric event, like a football game. I made these ahead of time and rewarmed the next day for a tailgate party. Will make again.

Grilled Fish Tacos with Chipotle-Lime Dressing

This was perfect as is! I was hesitant to use Old Bay, but it blended in and added to the flavor, it did not stand out on its own. This is my new go-to recipe for fish tacos.

Southern as You Can Get Collard Greens

Great way to make a lower-carb veggie side dish. They were tasty but more soupy than I expected. Next time I'll cut back on the liquid. My BF loved them and he "doesn't like collard greens." :)

White Chocolate Raspberry Cheesecake

I didn't expect this to be SO good... this is my new cheesecake go-to, for sure. The texture was amazing w/the white chocolate chips mixed in. I topped it with fresh raspberries, shaved white Godiva chocolate, and some whipped cream on the side. Very pretty and DE-lish!

Olive Pinwheel Bread

I used a refrigerated roll of french bread dough - you can unroll it w/a little patience. I also added slivers of fresh basil and cracked pepper. It turned out GREAT, in both presentation and in taste. I used a mix of olives from the Safeway olive bar, including a few cloves of their roasted garlic ... YUM!

Brown Sugar Smokies

What's not to love? Meat wrapped in meat sprinkled with sugar. Yum! These have been a big hit for me twice now, I recommend them for any party with hungry men! (or women :) )

Jalapeno Corn Bread

This was good but didn't blow my socks off. I chopped and roasted the jalapenos first, which I think was a good decision. I would make this again but I think I'd experiment with adding creamed corn or a handful of frozen corn and maybe some chopped apple.

Fiery Fish Tacos with Crunchy Corn Salsa

These were good. I used 1/2 the spices like other suggested (even though I like super-spicy food, I didn't want to overpower the fish) and toped them with finely shreded cabbage. I didn't have jicama so I used a granny smith apple - it was a great choice! The condiment recipes make a lot... I suggest halving it.

Day Before Mashed Potatoes

Grandma's Green Bean Casserole

Chicken Kabobs Mexicana

My BF loves (LOVES) cilantro ... he calls it the "secret ingredient" for anything. So I HAD to make this and it didn't dissapoint. He asked "how'd you get the cilantro flavor into the chicken?" ... compliment! Instead of using skewers, I had an epiphany that has forever changed the way I will grill: I used CleanBBQ aluminum disposable grill liners - they're bendable, so I layed everything out on them, folded them over and crimped the sides so I could flip them easily and the food still had real grill lines. I used separate ones for meat, zucchini and tomatoes. Seriously, try this!

Rubbed and Grilled Pork Loin

This was SO easy and so flavorful! I marinated it for 24 hours because dinner plans changed the day I planned to grill it. Here's what I'll do differently next time: 1) sear it on lower heat - it was too hard on the outside (bit too overdone); 2) cook it less ... I think next time I'll remove it from the grill 5 degrees under the "done" temperature, as it contines to cook as it sits and it was a little dry. It was still delicious, first day and as leftovers. I served it - as another recommended - with Amy's Cilantro Cream Sauce (from this site) and Baked Applesauce (from this site). It was a GREAT dinner!

Amy's Cilantro Cream Sauce

A definite 5-star! I would suggest making only 1/2 of the recipe, however, because it makes a ton. I am going to see if I can freeze it in small containers to use as-needed. I used 3/4 bunch cilantro and 1/2 of a really hot jalapeno and only 1/2 the garlic powder ... the flavor was great. We had it with the Rubbed and Grilled Pork Loin (from this site) and I used leftovers days later on shrimp fajitas. Really, really good on fajitas, I think I'll have to have it every time now! I think it would also be fantastic on fish tacos.

Baked Applesauce

I added 3 T of brandy and used only 1/2 the sugar. I used 2 each of 3 different types of apples. It was a tiny bit boring but - aside from all the peeling - super easy to make, so I'll make it again. I think next time I will stick with the more tart varieties of apples (more granny smith).

Dried Cherries, Pecans and Rosemary Brie en Croute

Made this for a party - used the smaller round of brie. The taste was amazing, the presentation, not so much. Mine looked messy - my fault completely - but I will definitely make it again and be more careful with the pastry dough so it will look as good as it tastes.

Grill Dough

I was afraid to make this, to be honest! I've never made dough from scratch, much less grilled it. But this is a definite make-again! I cooked it over indirect heat on the gas grill 10 or so minutes on a cookie sheet and then flipped it, added the Exquisite Pizza Sauce (from this site), fresh spinach, basil, mushrooms and pepperoni plus swiss (1/4) and mozzarella (3/4) cheese. I turned up the heat and cooked it 5ish minutes - just untill the pepperoni crisped up a tiny bit around the edges. I served it with Roasted Beet, Peach and Goat Cheese Salad (from this site) ... dinner was awesome, I wouldn't change a thing! YUM!
