Portobello Stacks
First I took the slices of eggplant and put them on a cookie sheet and sprinkled them with olive oil, basil and garlic powder. Broiled them 5 minutes on each side. Then I threw the eggplant in a 9X13 pan and threw in the balsamic marinated mushrooms and onions. I dumped in a 28oz. can of diced tomatoes and and baked for 45 minutes to one hour at 350. Then topped with mozzerella and parmesian. It was incredibly yummy.

Asparagus Cashew Rice Pilaf
This recipe is just TOO good! Didn't have asparagus so I threw in a handful of frozen peas toward the end. This is great with or without the cashews or vegetables. I can see that a lot of fun can be had with this one...lots of variations to play with. Yummy!

Roasted Vegetables
Loved it, loved it, loved it. Didn't have butternut squash so I used carrots. This is so easy. The hubby loved it too. It is guaranteed to be a regular around here. Thanks for putting this one online.
