Cheesecake Bars

Fixed these yesterday for an afternoon card game, twelve attendees. Everyone LOVED it and wanted recipe. In the interest of full-disclosure, I did a couple modifications (the way my mother used to fix). Pecans instead of walnuts-personal preference. Also, put a bit more than half of pastry mixture in bottom. Baked for 15 minutes. Poured cream cheese mixture over. Crumbled remaining pastry mixture over it. Baked for 20 minutes.

Sun-Dried Tomato and Pesto Cheese Spread

Yum yum!! I made it per directions except: (1) used reduced-fat cream cheese; and, (2) layered cream cheese, tomato, cream cheese, pesto, cream cheese. I do wish I'd used up all the cream cheese - maybe added to tomato mixture - which I found a bit overpowering. The dinner guests were totally impressed and fought for the left-overs.

Flan Mexicano (Mexican Flan)

I took this to a dinner party this evening. RAVE reviews. I made it according to directions except I substituted evaporated milk for the whole milk, orange juice and cornstarch. I was in the mood for plain old flan. But, next time I'm trying the recipe as written. Well done, Tigerlily (Note: does anyone know why there were darker *solid* pieces of the caramel sauce when I turned over the flan? Didn't hurt the flan - just didn't look perfect.) UPDATE: 9/29/12. Made it again - this time with the orange juice & peel. It was fabulous - the orange flavoring was more of a hint, not overpowering. All the dinner guests loved it. The caramel sauce was perfect this time.

Company Cheesecake

My husband's comment: This is SUPERB. I'll second that. Although it cracked - who cares? It is truly the best. I will admit that I'm on the fence tho' about the crust. I might like a graham cracker crust better (certainly easier). Hmmm - guess that means another cheesecake in the near future to find out!

Roasted Pork Loin

Used this recipe for tonight's dinner. Very tasty. Pretty moist considering it is a loin which is often dry - at least when I cook it. Read some of the negative comments and have the following input. (1) the "Cook Time" lists 2 hours, yet the recipe itself says 1 hour. My 2 pound loin was ready in just over 1 hour. (2) I used 1 tsp. of rosemary and it was plenty for me (others might like more.) Personally I would never use POWDERED rosemary (which at least one person did). If you use powdered, do NOT use 1 Tablespoon - maybe a teaspoon (or less).

Chicken Tortilla Soup I

Nothing fancy - just a great (and EASY) soup to make. I used canned chicken because of time constraints. It freezes well so I plan on making a double batch soon.
