Banana Sour Cream Bread

I really liked this banana bread. It's very moist, and the cinnamon is such a nice touch. I would like to comment, though, on the fact that on the title page, where you see the name of the recipe and a little blurb about it, it says something about it making "four small loaves", and that is not the case. I filled up four small loaf pans and a regular loaf pan, and still had some batter left!

Tarragon Tuna Salad

I used an envelope of albacore tuna, which is about 7 oz., so I decided not to even measure the other ingredients, but I used them all and didn't make any substitutions, and I liked the results. Very different from my usual mayo-and-sweet-pickle combo, but in a nice, fresh, healthy-tasting way. Will make again.

Baked Asparagus with Balsamic Butter Sauce

Buffalo Chicken Wing Soup

This tastes good for being canned chicken soup dressed up. I use roast chicken from the deli, so it's very easy. I've made it a few times now, and once when I was in a hurry I put it on the stovetop. All it really needs is to warm up, not to cook. I use the larger amounth of hot sauce, and it really does taste like Buffalo wings!

Three Cheese Garlic Scalloped Potatoes

These are cheesy, creamy and good. Baked them in a 9" X 13" pan. My food processor didn't slice very thin, so they had to bake about 1 hr. 50 minutes. Next time I would salt and pepper the potaotes directly, rather than salting the cheese.

Pork Chops with Mushroom Onion Gravy

This was not very good. I seasoned the meat with salt and pepper, and substituted wine for water, and they were still very bland. Even after baking for an hour, they weren't all that tender.

Toasted Garlic Bread

The flavor of the bread was great, but I'm only giving it three stars because the proportions seem to be way off. Maybe my family just likes strong flavors, but I used the suggested amounts of topping ingredients and cheese on just eight slices of bread!

Downeast Maine Pumpkin Bread

Straightforward pumpkin bread--no complaints--we gobbled up almost a whole loaf the first afternoon. Perfectly done in 50 minutes. The only thing that varied from the recipe is that stirring the wet and dry ingredients together didn't work--way to lumpy--I had to use a whisk.

Caesar Salad Supreme

I followed the directions exactly, except we applied our own dressing individually, and I didn't think there was enough to coat a whole head of lettuce. But it was delicious--a nice change from a more traditional Caesar.

Pan-Fried Asparagus

This was really good--I didn't give it five stars because I think 10 minutes is too long to cook it, the recipe calls for way too much fat, and there should be a note telling you to stir, stir, stir to keep the garlic from burning. I made this with a whole pound of asparagus and didn't double the fat, and it was plenty. I wouldn't hesitate to cut the butter and oil in half next time. Also, the finished product is quite salty, but we loved it!

Black and Orange Spook Cups

Banana Peanut Butter Bread

I thought this was a very good bread, but I did make modifications, based on suggestions from other reviewers. I added a t. of vanilla and 1/2 C. of chocolate chips, after tossing them in the dry ingredients so they wouldn't sink to the bottom. I reduced the flour to 1 3/4 C. and increased the p.b. (chunky) to 3/4 C. I also omitted the walnuts. I had foil on it for about the last 20 minutes of baking, and it was still plenty dark. Tasty and a nice variation on plain old banana bread!

Oven Roasted Potatoes

These were pretty good. Lots of garlic, but that's okay with us. My husband did say, "They taste like they belong with breakfast." But I think that's because they're cubed. Next time I make them I'll try them sliced or in sticks.

Chocolate Chip Peppermint Cookies

These were a let-down. I LOVE peppermint patties, so made a double batch, and we didn't even come close to eating them all. I don't know what they're missing; the chocolate is there, the peppermint is there, they just somehow were dissapointing. I baked them for 10 minutes at 325 degrees, with a 2-minute rest out of the oven, and the texture was perfect.

Strawberry Spinach Salad I

This was a good salad. The color is great, and the almonds add a nice crunch. I would have given it five stars if it didn't have so much sugar. It tastes great; I just feel a little guilty calling it a salad, and not a dessert! Also, this made a HUGE salad, I think a lot more than four servings.

Eileen's Meatloaf

This was a very good meat loaf. I made it for a couple I know, who commented, "This isn't like my mom's meat loaf at all--I remember it always being very dry." It's very moist and has great flavor. And so easy to make!

Butterscotch Gingerbread Cookies

These were fantastic! I reduced the temperature to 325 and baked them for roughly the same amount of time to get a softer, chewier cookie, and they were just unbelievable. Will make them again and again. A great cookie for the fall season...
