Pumpkin Cheesecake I

This was a good recipe, though I tweaked it to make fuller pies. The recipe isn't quite enough to make 2 full pies. So if you add 1/3 of what the recipe calls for, to what you've already got, it should be enough to fill 2 pies. I wanted a more cream-cheesy feel/taste, so I added more cream cheese and cut down on the sugar. For my preference, it was a creamier not-so-sweet flavor. All in all everyone loved it.

Raspberry and Almond Shortbread Thumbprints

These were great cookies, the dough even tasted good by itself. I used strawberry and grape jam since I didn't have rasberry, they tasted delicious. My girlfriend and kid loved them, which by the way it's a great cookie to make with kids since it's very simple. The little guy enjoyed the mixing and filling with jam. Next time I will be sure to double up on the recipe since it doesn't make very many.

Cabbage Rolls II

At first I didn't think these would be a 5-star, but I had to do something with the extra cabbage. I didn't use the regular old tomato sauce but instead a can of flavored tomato puree(to add a little zing). There could have been more sauce so I will double the sauce part of the recipe next time I make them. All in all they had an excellent taste to them and if you have someone who doesn't like cabbage, they can scoop out the inside and drizzle on some sauce. Excellent!

Fluffy French Toast

I wouldn't say these are exactly the greatest, but they had a nice taste to them. There wasn't much difference between these and regular french toast, except they take longer to cook and were a tiny bit thicker. Flavor and texture were fairly the same. I did add a teaspoon of baking powder and mixed in all in the blender as someone suggested. I don't think it was worth the extra effort.

Mock Filets

This dish has a slight sweet flavor to it which makes it nice. I did tweak the recipe a bit to my liking. I felt the amount of bread crumbs requested would dry out the beef, particularly lean ground beef. I cut it down to about 1/2 of what was asked and added a 1/2 teaspoon of worcestershire sauce. I'd say they're more of a mock mini-meatloaf than a mock filet. Though they are full flavor, they didn't quite hit a 5-star mark.
