Chicken Milano

My husband made this tonight with soy milk instead of heavy cream, and a vegan butter (my son has allergies). Usually we add onions, peppers and zucchini, too. Absolutely delicious. Gourmet flavor, healthy, easy. I highly recommend this one.

Pollo (Chicken) Fricassee from Puerto Rico

Tasty! Not sure why we pureed everything, but it was good. We used boneless skinless chicken breasts instead of thighs. Turned out fine. Will probably make again.

Low Sugar Strawberry Rhubarb Crunch

Quite good. I did add 2 Tbsp cornstarch and 2 total Tbsp of honey, as one reviewer mentioned. Turned out great and definitely not too sweet. Other recipes called for 2 cups of sugar!

Chicken with Quinoa and Veggies

This was delicous. Great flavor, and different than our usual chicken stir fries. We did add one red bell pepper. Also, instead of a normal tomato, we used a handful of grape tomatoes cut in half. For the feta, we used reduced fat. Excellent recipe.

Skillet Balsamic Chicken

This is one of my favorite recipes! DELICIOUS. Weight Watchers friendly and diabetic friendly too! We put one whole onion in (instead of 2) and as many veggies as we have in the fridge: zucchini, bell pepper and green beans... We also only eat 3-4 oz servings of chicken at a time, so to make four servings, we use just 1 lb. of chicken.

Garlicky Quinoa and Garbanzo Bean Salad

We like all the ingredients here but found this a bit bland. Our mods included extra garlic and reduced olive oil. It's worth experimenting with again, perhaps with more mustard next time.

Ginger Glazed Mahi Mahi

This is my new favorite food! The glaze on this fish, which my husband and I used on tilapia instead of mahi mahi, should be put in a jar and sold. It's delicious!

Blueberry Zucchini Bread

I made this in one big pan to yield 16 good-sized pieces (cut like a cake). I replaced half of some ingredients to reduce it from 8 pts (Weight Watchers speak) to 5 pts per serving. 1/2 oil replaced with applesauce. 1/2 white flour replaced with wheat flour. 1/2 sugar replaced with Splenda. Turned out fine. Not as sweet, I'm sure, but good.

Buttery Lemon Spinach

Husband loved it -- we nuked it for 3 minutes total in a weak microwave, so the spinach was just warm, not fully cooked. He hates the slimy pile of spinach that often results after I steam it... He really enjoyed this and told me we should make it often. I halved everything, melted the garlic/butter/lemon juice first and poured over teh top to evenly coat. Also added a few sprinkles of red pepper flakes as recommended by others. Good, simple-as-can-be, healthy side. Oh, and using I Can't Believe it's Not Butter Light, this was only 1 point (Weight Watchers).

Awful lot of work for not much reward. The flavor wasn't outstanding. If we do it again which is doubtful, we'll use a whole acorn squash.
