Crab-Stuffed Catfish

Reviewed: Feb. 2, 2012
I used tilapia instead of catfish and put the stuffing on top. I didn't add the cheese and added cajun seasoning and old bay in the stuffing and on the fish. My husband loved it! Will make again.

Shrimp Scampi Bake

Reviewed: Feb. 2, 2012
liked the flavor, wish I would have used raw shrimp instead of frozen, would make again. I didn't use as much butter as directed as 1 cup seemed too much.

Summertime Tilapia

My husband hated this, felt it was bitter. I baked it with the marinade as suggested, but wish now that I had not. I won't be making this again.

Best Spanish Rice

Reviewed: Feb. 2, 2012
I had to add 3/4 a cup extra chicken broth and the rice was still a little crunchy for my taste. My husband said he felt that it was perfect. I cooked it for more than 20 min. I added garlic, paprika, and chili powder.

At first I was nervous about the balsamic, but the marinade smelled/tasted amazing! I did add little orange juice/jest. I will make again!
