Fresh Rhubarb Pie

This was fabulous. I did make some little changes tho--I upped the rhubarb per pie to 6cups (could have done fine with 8 I think), kept sugar at 1 1/3 cup, upped the flour by half for a non-running pie...added 1 tsp cinnamon to the flour/sugar mix, and a few drops of vanilla to the pie all around, before baking..milk and sugar on top before baking made a flaky, crispy top crust--gosh but the kids LOVED THIS, so did the husband...out of vanilla ice cream so used some RediWhip instead. Did 2 of these today, but next time I'll do 3 or 4 on one day. SUPER RECIPE, THANKS!

Hearty Breakfast Cookies

Wow, these were great! I used all whole wheat flour and I added in 1/3 cup ground flaxseed, plus about double the oats--old fashioned, not quick oats. They are absolutely umscious...and next time I will sub in apple sauce or apple butter in place of some or all of the 1/2 cup butter. The kids loved these, I loved these...just delicious and perfect. Thanks!

Wheat Crackers

I made them 'as is' first, then thought to put some sweet in em next time--comparing to Wheat Thins for instance, so I added in 1/3 cup white sugar, 1/3 cup brown sugar, and a couple Tbsp of honey. Quite good this way! Next time I will change that to at least 2/3 cup of brown sugar, no white sugar, and then some honey. A little honey on top might be nice as well, I think. Having a little sweetness makes a huge difference! Thanks for a good cracker base!

Monkey Bread I

I had something called monkey bread about 25 yrs ago and remembered it all this time. Found this one and it came out wonderfully! Also I used butter instead of margarine and I used a silicon bundt pan, which eliminated any sticking inside--anything that wanted to cling you just pop out cause the pan is flexible. Everyone loved it and I'll make it again and again. Thanks!

Sweet Potato Rolls

I forgot to keep the sweet potato water, but these came out great anyway, only I did some rolls and some of the dough in loaf pans. Everyone loved this bread!! Very very good.

Can't Tell They're Low-fat Brownies

I quadrupled this recipe, and added in a couple tsp of baking powder. This made 3 pans for me, WONDERFUL WONDERFUL delicious brownies. Also, I sprinkled pecans pieces on the top. Everyone here loved em--6 kids plus hubbie. I tasted them and they were TOPS. KEEPER. :-)

Asian Salad

This was excellent--I used leftover Easter ham--good size chunk--this was so easy and delicious-everyone liked it. Love those one-pot balanced meals--would have done rolls if I'd had time.

Hamburger, Potato, and Kidney Bean Casserole

This was really good, and so easy! I keep cooked ground in the freezer already, so all I did was thaw that, do it w/ the onions, then piece it together. All my kids loved it--the bowls were cleaned, and that spells success.
