Creamy Black Bean Dip

This was a little too salty with an odd sweet taste. I didn't care for the flavor combinations. I used fresh onion and added bottled garlic and cilantro. If I made again, I'd cut back on both vinegars, the ketchup, and the salt. I'd pump up the raw onion and the chili powder and add fresh tomatoes. However, this was super-easy, healthy, and I had every ingredient already in my pantry.

Hot and Sour Chinese Eggplant

As a new cook, this was one of the more flavorful, intricate recipes I've ever prepared. In fact, I plan to use the sauce for chicken and other stir-fry veggies now that eggplant season is gone. Great recipe! I highly recommend adding onion and green/red bell peppers for color and variety. Be careful not to overcook the eggplant.

West African Vegetable Stew

This was totally delish. A very fresh-tasting dish with a unique flavor profile - a good *savory* sweet potato dish. I doubled the red pepper flakes and the cinnamon - creative cooks could vary seasonings for even more interesting flavor. Served over couscous. I agree with other reviewers, it turns sad in the fridge (sorry, spinach!) but I ate the leftovers happily over the next few days.

Easy Lemon Cookies

These weren't as lemony as I would have liked AND I used two tablespoons of lemon juice instead of the lemon extract. Maybe some zest would have helped? The dough was really sticky, but keeping it in the freezer for just 15 minutes made a big difference in manageability (but add an extra two-ish minutes to the bake time or let warm to room temp after balling). The texture was nice, as was the appearance. It was a very easy recipe (until it was time for scooping). I don't think I'll make these again.
