Roasted Vegetables

This was amazing! I didn't have time to let it marinade for 2 hours, just 30 minutes. I used eggplant, squash, zuchini, green and red bell peppers, red onions, asparagus, portobello mushrooms, baby carrots and cherry tomatoes. I doubled the marinade because I had so many vegetables and left out the lemon zest so it wouldn't be too strong of a flavor. I baked it at 400 for 20 minutes, stirred it and put it back in for another 20. We ate them hot because we couldn't wait, but they are better at room temperature. Make extra- they are great the next day as a cold veggie salad, added to a sandwich or wrap (try them on thick sliced french bread with gruyere cheese or in a pita with crumbled goat cheese), or mixed with scrambled egg whites for breakfast. Such great flavor- this is the best roasted veggie recipe I've tried yet! Thank you for sharing!

Easy Tilapia with Wine and Tomatoes

My boyfriend loved this but I thought it was okay. It was very light and fresh, but not overly flavorful- just tasted like the wine. And I doubled the amount of garlic. Next time I think I will add some Old Bay or cajun seasoning to give it more flavor. If you don't like fishy taste though, this cooking method takes away the fishy flavor. It was too cold to grill, so I baked it in a 425 oven for 20 minutes and it was perfectly done.

Country Apple Dumplings

This was AMAZING. I made some changes to make it healthier and lower in sugar- I used reduced fat crescent rolls, substituted Splenda for the sugar, and used Diet Mountain Dew. You couldn't tell, they were delicious. Thank you for the recipe, I will definitely make these again!

Grilled Marinated Shrimp

Delicious! The marinade was very light and added perfect flavor. The only changes I made was to use ketchup instead of tomato paste because that was all I had, and I made them with the broiler. Thanks for a great recipe, I will definately make these again!

Microwave Baked Potato

Easy and yummy. I cooked it for 10 minutes in the microwave and then finished it up in the oven for a few minutes to give the skin that crispiness.

Coffee Liqueur

This was delicious! Much better than Kahlua. I made it as Xmas gifts and bottled it in beautiful bottles I got fom Pier One- it was a huge hit! I used a cheap bottle of vodka with no ill-effects.

Chicken Lasagna III

This was delicious! Even my picky boyfriend liked it. I used cream of mushroom soup with roasted garlic and cream of chicken with herbs- it gave it great flavor. I also added a package of frozen chopped broccoli for some extra veggies and some chopped green pepper. Next time I think I'll add red pepper to add color. Using frozen chopped cooked chicken, frozen broccoli and prechopped onion and pepper made putting this together a breeze! Its even better the next day too! will definitely make this again.

Fruity Curry Chicken Salad

This reminds me of a chicken salad I used to love at my favorite deli! I used nonfat mayo and canned chunk white chicken, left out the celery and onions and substituted red grapes and granny smith apples because that is what I had onhand. I also used slivered almonds instead because I prefer almonds in my chicken salad. It was great! Its definitely much much better the next day... its hard to wait but you will be glad you did!

Lemon Garlic Tilapia

I took another reviewers advice and upped the butter to 4 tbs, the garlic to 3 cloves, and left the lemon juice at 3 tbs. I also sprinkled the fillets with Tony Chacheres seasoning, and sauteed the garlic, butter, lemon juice and pareley before pouring over the fish. I baked it for about 12 minutes at 400 degrees. It was fantastic! I don't even like fish, but it was so good. My boyfriend loved it as well. It was a perfect meal with a green salad and some crusty french bread. Thanks for the recipe and thanks to the other reviewers for the tips!

Chicken and Red Wine Sauce

This was a decent recipe, although I didn't find it to be spectacular. The sauce was a little too sweet, even though I cut the amount of sugar by half. Still, it is tasty and easy.

Apricot Chicken I

I love this recipe! I make it all the time. Sometimes I substitute Apricot-Pineapple preserves, and it turns just as good. You can substitute cranberry suace for the apricot preserves, and its also great. This recipe is fantastic!!

Oven Beef Stew

This stew was delicious. I used an onion soup packet instead of canned soup, and only used a cup of water. I used canned white potatoes instead, so I added them in after 2 hours. I added some canned mushrooms as well. It smelled so good baking, and tasted just as great. Perfect recipe! Thank you!
