Shrimp Alfredo Pasta

This was fantastic. I made a very quick and easy version. I used precooked shrimp and refrigerated linguine. I also took frozen green pepper, red pepper and onion mix and threw it into my mini chopper. Oh and I only used a 1/4 cup of butter and it was more than enough.

Spicy Bean Salsa

This was so good and I haven't even let it set yet. I used black beans and pinto instead of the black-eyed peas. I also used fresh salad dressing jalapenos and tomatoes. I added fresh garlic, lots of cumin and cilantro. Oh, and red onion works great. In the end I drained off about a 1/2 cup of extra liquid. TFS.

Grilled Salmon Kyoto

This was the BEST salmon I have ever eaten. It was so incredibly moist. I made some very minor changes. I used salmon filet instead of steaks and grilled it on the Foreman for 5 mins. I used low sodium soy sauce, fresh orange juice (doubled)and sesame oil instead of veggie. Thanks so much for sharing!!!!!

Patti's Mussels a la Mariniere

I love this recipe. I used shallots instead of green onions. It gave the recipe a lot more depth. I could eat a whole loaf of bread with this sauce. TFS!!!

Tilapia with Creamy Sauce

One of the best recipes I have tried. I used sole instead of tilapia. I'm sure any light fish would be great. The only changes I made and I thought it made a huge difference, was change the lemon to 2 tsp and I sauteed some shallots and used them in the sauce. TFS. I can't wait to make it again.

Pico de Gallo Chicken Quesadillas

Fantastic recipe. I left out the green pepper, used co-jack cheese and doubled the recipe. Other than that, I followed the recipe exactly, which I rarely do. It was perfect. I will be using this pico de gallo from now on. TFS.

Vikki's Red Bean Sausage

This is one of the best recipes I have ever tried from this site. I made some changes and it was still pretty hot. I used hot smoked sausage so I only used 1/2 tsp cayenne, 1/8 tsp pepper and completely omitted the chilis. I prefer pinto beans to light kidneys. I also omitted the green pepper and increased the garlic to 4 cloves. TFS.

Linguine with Peppers and Sausage

This is a fantastic base. I did a lot of tweaking though. I prefer a heartier pasta with this kind of sauce. I used tortellini. Gemilli or bowties would work great too. I added salt, pepper, garlic powder, red pepper flakes and lots of Italian Seasoning. I also added baby bella mushrooms, used one red and one green pepper and romano instead or parm cheese. So good!! TFS

Split Pea Soup Atu

This was much better than I had expected. The kick made all the difference. I did cut the recipe in half and then halved the milk again. I made it in the pressure cooker, so I had no need to puree the soup. I used a meaty ham bone instead of the ham hocks and ground black pepper instead of the white. Can't wait to see how this soup freezes. TFS.

Santa Fe Veggie Quesadillas

These were so good. I made them in my quesadilla maker. It was so easy. The only change I made was using frozen red and green peppers and onions, instead of the green onion and red bell pepper. TFS.

Fried Mozzarella Cheese Sticks

These are really good. I make them in the deep fryer. I use frozen string cheese and double dip in the egg and bread crumbs as others have suggested. Barilla Marinara makes great dipping sauce. TFS.

Pumpkin Cookie Dip

I make this all the time and serve with ginger snaps. I use pumpkin pie spice instead of just cinnamon. It's much easier to mix it in a Kitchen Aid.

Buffalo Style Chicken Pizza

This was fantastic although I made some changes. I made my own pizza crust and cooked it in advance. Instead of one 16 bottle of dressing, I used one 8 oz bottle. I boiled and shredded the chicken and mixed it with a few tablespoons of hot WING sauce, and omitted the butter. I also used two parts mozzarella and one part sharp cheddar. I will definitely be making this again. TFS.

Burgundy Pork Tenderloin

I followed pretty much all the suggestions. Browned the meat, used one cup wine and one cup water with beef bouillon cube. I also used 2 packages of gravy and thickened with flour. I added mushrooms and eliminated the celery. I only cooked it for 15 mins. in the pressure cooker. It was delicious and no funny color. TFS.

Salsa Chicken Rice Casserole

This was really good. I made some changes though. I cut the recipe in half using only cream of mushroom. I used only enough water to cover the chicken. Then I generously covered the chicken with Southwestern Seasoning. I used medium salsa and 1/2 sharp cheddar, 1/2 pepper jack cheese. It came out really yummy. Next time I think I will do the same thing, but cook the chicken with taco seasoning. **Well after my dh polished off the leftovers without me, I think next time I will make the full recipe. Thanks again.**

Wonton Soup

Yummy!! My whole family loved this soup. I omitted the shrimp because I didn't have any. I also followed another reviewers tip and precooked the wontons. Don't do that. The pork was a bit dry and the wontons too mushy. It would have been perfect had I not done that. I did add extra soy sauce and some sesame oil to the soup. It was great. TFS!!

BBQ Chicken Pizza II

This was really good and as someone else mentioned...even better the next day. I think next time, I will let the chicken sit in the bbq sauce in the fridge for a few hours. I always make my crust from scratch, but I did cut corners with some of the other things. I didn't have any red onion, so I used a combo of frozen peppers and onions. I used frozen grilled chicken. I mixed sharp cheddar, monterey jack and mozz. cheeses. I also used TS bacon bacon for the top. Oh, and good old Kraft bbq sauce works great. TFS.

Aunty Pasto's Seafood Lasagna

I made this a long time ago. I don't remember changing the recipe any. What I do remember is that it was FANTASTIC!! I will have to make this again soon. TFS. Oh, I did use jumbo lump crab in the can. I was not sure which kind was supposed to be used. ***So my cooking style has really changed over the past few years. I made this again, but this time made my own cream of mushroom soup. (cream of mushroom soup III from this site, using half and half instead of cream). Since I did that, I didn't need to add the additional mushrooms or wine. There is sherry in the soup. I didn't need the additional milk either. I also used low-fat cream cheese. Still a fantastic recipe, though pretty expensive to make.
