Mouth-Watering Stuffed Mushrooms
Very good base recipe. I sauteed mushrooms, garlic and shallots in olive oil and butter. I added some Worcestershire sauce to the the mixture and brushed with butter and topped with just a bit of panko bread crumbs for crunch. Also the mixture was enough for 22 large stuffing mushrooms. TFS!

Bubba's Jambalaya
This recipe is delicious. I only made a couple very minor changes. I diced up two jalapenos and added them to the onion mixture and added fresh ground pepper. I used brown rice and large shrimp because that's what I had. And I garnished with some fresh flat leaf parsley. **one more thing, the chicken was a bit dry. I think next time, I'd poach it in some chicken stock and throw it in at the end. Make sureyou taste before you add any salt. All the pork products, especially the bacon make it plenty salty...and I love salt. ;)

Eileen's Meatloaf
This was really good. I used half ground beef and half Jimmy Dean sausage. I also used asiago instead of parm, since that's what I had in the house. It was delicious, and I'm not even a meatloaf lover.
