Teena's Overnight Southern Buttermilk Biscuits

Reviewed: Jul. 16, 2011
These were tasty biscuits! I substituted half of the shortening with butter, but kept everything else the same. I also just cut mine into squares with a pizza cutter. They rise super high this way! Delicious!

Chicken Cordon Bleu II

Reviewed: Mar. 7, 2009
Absolutely amazing! The sauce really finished this off nicely. I substituted whole milk in place of the cream, but kept everything else the same. I browned the chicken on the stove top and transferred the skillet to the oven where I baked it for 30 minutes @ 350. My daughter requested that we make it every night!

White Chocolate Raspberry Cheesecake

Reviewed: Feb. 20, 2009
This cheesecake is to die for!!! The only changes I made were to the crust... just added more cookie and reduced sugar. I also cooked it in a water bath... a necessity for a good cheesecake. Let it cool completely before you put it into the fridge. I swore I would never use another cheesecake recipe, but this is an excellent alternative. Friends were lining up for this one!!!

Sweet Coated Pecans

Reviewed: Dec. 22, 2008
Love this recipe! I doubled the batch, but added in an extra egg white. I also used half brown sugar, half white sugar and a splash of vanilla. Tastes better than those nut vendors that are all over the malls!

Shepherd's Pie VI

Reviewed: Sep. 17, 2008
This recipe serves as a great starting place. I prepared this a day ahead of time and baked it for about an hour (35 minutes covered, 25 minutes uncovered). I added seasonings into every step to suite my own tastes and it turned out to be delicious! I seasoned my beef with Worcestershire, garlic, Lawry's, and pepper. I also added a clove of garlic to the carrots and potatoes as they cooked. I prepared my mashed potatoes with onion powder, milk and sour cream. This is a definite keeper on the comfort food list!

Cake Balls

Reviewed: Sep. 16, 2008
I just had to try these after reading all of the reviews. I admit, after I finally finished dipping all of them, I swore I would not make them again no matter how good they were. That was before I tasted them... Everyone who tasted them wanted to know when I would be making them again! I used dark chocolate cake mix with chocolate cream cheese frosting. To indulge one of my favorite flavor combinations, I dipped them in mint chocolate. Very good, albeit time consuming. My second attempt was somewhat more successful with reducing the prep time. I used 2 fondue skewers... 1 to dip and the other to slide the cake ball onto waxed paper.

Spring Biscotti

Reviewed: May 13, 2008
This biscotti is amazing! I forgot the egg white, but it still turned out great. The only other change (which was intentional) was the use of almonds instead of pistachios. I tried several recipes, but this is definitely a keeper!

Gourmet Chicken Pizza

Reviewed: Apr. 19, 2008
This is a great diversion from the standard pizza. I used Jay's pizza crust and made it into 2 thin crust pizzas. Rather than measuring out Ranch, just use enough to cover the crust. I have never had any problems with my toppings sliding off. Mesquite grilled chicken adds a nice flavor to the pizza as well as a little cilantro ... definitely not blah! ** Just made this on the grill using the Grill Dough recipe from this site. A little smoky grill flavor tastes excellent with this pizza!

Great "as is" recipe. I marinated my pork for about an hour and baked it. It was yummy served with some of the juice for dipping.

Black Bean Tortilla Casserole

Reviewed: Apr. 5, 2008
This was a nice change of pace from our usual dinner routine. I added some red pepper to the mix and substituted some ground turkey seasoned with a little taco seasoning for one can of the cans of black beans. I also used a whole package of cheese. My husband requested that it go on our permanent rotation!

Carolyn's Orange Rolls

Reviewed: Mar. 23, 2008
These rolls are excellent! I had to add about 1 cup of flour, but I kept everything else the same. I topped them with cream cheese icing flavored with OJ and some orange zest. The orange rolls actually were gone before the cinnamon rolls at a church brunch. Rave reviews by all!

Taco Seasoning I

Reviewed: Mar. 22, 2008
Very good seasoning... just a little on the salty side. I just made enough to supply me for a long time, but I used about half the salt. This is nice to have on hand for dinner in a pinch.

Cabbage Fat-Burning Soup

Reviewed: Feb. 26, 2008
I did a modified half version of this recipe to suit my own tastes, but I stayed close to the main recipe. After some tasting, I added some frozen corn as well as minced garlic and Italian seasoning. I still thought it was a little strong with the tomato base and added more water as I went. Also, I used 3 beef bouillon cubes in place of the broth. All together, pretty good. I am going to keep playing with it because I like the "fat-burning" part of it!

Great recipe, even when prepared in the oven. I added several cloves of garlic and was glad to have added in the extra bit of flavor. My 6 year old daughter couldn't get enough!

Roast Sticky Chicken-Rotisserie Style

Reviewed: Feb. 11, 2008
Very tasty chicken, and oh so tender! The only change I made was to use black pepper for the white (it was all I had). The chicken was moist and juicy and fell off the bone. I wished I would have had more juice for gravy, so next time I think I will add some broth to the pan during in the middle of the cooking.

Baked Spaghetti Squash Lasagna Style

Reviewed: Jan. 28, 2008
I found this recipe to be absolutely delicious, as did my 6 year old daughter. My skeptical husband felt deceived by the name of this as it had no meat and no pasta... poor guy! I ended up using Ragu pasta sauce because I didn't have other ingredients on hand. I also added 1 cup of cottage cheese with the other cheeses. I am looking forward to sharing this dish for family gatherings. Deliciously healthy!

Whole Wheat and Honey Pizza Dough

Reviewed: Jan. 18, 2008
I am on a quest to better health, so I wanted to find a more nutritional way to consume pizza... This is it! I had to substitute ground flax seed for the wheat germ because it was what I had on hand, and I also added a little olive oil. I pre-baked the crust on the bottom rack at 400 degrees for about 10 minutes. I topped the pizza with grilled chicken, tomato, green onion and cilantro. Very yummy! This will make it into our regular meal rotation.
