Moist Chocolate Muffins

Made these with Sarah Jo's modifications: 1/2 cup sugar, 1/2 cup applesauce, 1/4 cup oil, but used 1/2 cup of fat free sour cream since didn't have plain yogurt, also 1 cup chocolate chips - turned out awesome! Hard to keep the kids from wanting to eat them all. Used paper cupcake liners, a 12-cupcake silicone pan, and a generous tablespoon full of thick batter to make smallish cupcakes - 350 degrees for 18 minutes in our oven - made 24 and 14 are left. Will definitely make again.

Aw-some Coleslaw

made this morning with miracle whip (sweeter than regular mayo) and 1/4 cup (or 4 tablespoons) sugar rather than 1/3 cup and increased the vinegar to 2 tablespoons, and a 16 ounce bag of shredded coleslaw. turned out tasting great. might decrease the sugar some more, try 3 tablespoons next time.

Perfect Summer Fruit Salad

used 1/2 of the orange juice/lemon juice mix on the fruit with strawberries, blue berries, apricots, nectarines, cantalope, and watermelon - was going to add apples and bananas, ran out of time, still tasted awesome!

Slow Cooker Homemade Beans

only changes I made were pintos instead of navy beans and 1/3 cup brown sugar. good flavor but still too sweet for my tastes, I'll try 1/4 cup of brown sugar next time. otherwise happy to make again.

Curried Coconut Chicken

only changes i made were to leave out the 8 ounce can of tomato sauce, drain the diced tomatoes, use a whole thinnly sliced onion, and double the curry powder. smelled great while cooking but tasted bland... not sure what it needs to be great but seemed to be missing something. still searching for a great curry recipe using coconut milk and curry powder.

Whole Wheat Beer Bread

hearty=yes, taste=great!, dense=YES, didn't rise much - not sure if beer should be flat? added fresh foamy bottle of beer- will make again because I love the ease and taste but is very dense

Thea's healthier Chocolate Chip Cookies

made these yesterday - did 1/2 cup butter and 1/2 cup regular applesauce, added 1/4 cup Benefiber powder - then half as regular choc chip cookies - batter was a little thin and spread = thin but very tasty cookies & the other 1/2 of the batter, added 1/4 cup unsweetened cocoa powder for double choc. cookies = batter was stiffer = thicker cookies but still tasted great - will make again - was same recipe as on the Kroger (King Soopers) brand chocolate chips except 1 extra tsp of vanilla

Flaky Food Processor Pie Crust

used all butter - used to make my 1st 2 pumpkin pies ever - thanks to the Lighter Libby Pumpkin Pie recipe here on the site - ended up freezing the butter & added 5 tablespoons of cold water rather than 3 - ended up with large crumbs - poured out onto table- pressed into dough ball with my hands - back into fridge for 3 hours until I could use it - rolled out beautifully - filled with light pumpkin pie filling and baked both - baked too long due to cracks on top but taste was awesome! flaky! buttery! utterly sinful - not good for you but can't beat the taste - cooled both pies & froze 1 for Christmas - other pie was gone in 2 days thanks to our 6-year-old who loves pumpkin pie & me too - will try to thaw pie in fridge for a day before reheating for 10 minutes - will see how it works out & report back

Picnic Slaw

used 1 and about 1/2 recipe of the slaw dressing with packaged cole slaw shreds = tasted great! Just as good a few days later out of the fridge - mom in-law asked for the recipe :) - left out peppers will try with them next time - made in AM and refrigerated for 6 hours until dinner

Greek Tzatziki

Used a whole cucumber - didn't have lemon juice so left it out - I bet if I strained the yogurt and the grated cucumber it would have turned out better - as is now = taste is good but too thin = salad dressing consistency - will try to add a 2nd cucumber strained this time to save it - also added 2 teaspoons of sugar.

Homemade Crispy Seasoned French Fries

tried with sweet potato fries cut to width of fingers, fried plain for a minute then dipped in batter (1 cup flour, garlic salt, paprika & cayenne to taste mixed with enough water to make syrup-consistency batter - 1/2 cup water?)& fried again for about 3 minutes (until golden brown)- much better than plain sweet potato fries - haven't had luck getting crispy sweet potato fries until now - thanks for the awesome (but fattening) recipe! also tried freezing the left over cooked fries - will pull them out & bake them another night, should be great.

Gourmet Thai Chicken Pizza

awesome - for sauce left out black tea and chili oil (per other reviewers and didn't have any chili oil) - sauce was more of a paste without those 2 ingredients - used all the sauce on one pizza, chicken, toasted sesame seeds, carrots, Vidalia onions, baby spinach leaves, red bell pepper slices on half and string cheese (didn't have regular Mozzarella available) - only thing I'd do different is use regular Mozzarella maybe mix in some Jack or Provalone cheese & add some red pepper flakes or a little chili paste - also used similar pizza crust recipe but not this one - will definitely make again.

Ultimate Double Chocolate Cookies

Makes a very, very good chocolate chewy cookie if you don't overbake it. If you do and it ends up hard, it still tastes great - like a round biscotti. My almost 3-year-old son and 6-year-old daughter had a great time "helping" lick off the beaters and clean out the bowl that I melted the chocolate in. They helped roll the pinched off dough pieces into balls too, in spite of saying they looked like "poop". Tasted great when cooked - rolled half of recipe into balls & froze in bags of 12 to thaw & bake at a later date. will have to see how the thaw & bake works out.

Super Sausage Gravy

very easy and excellent taste - made it with my husband's Lactaid fat-free milk and it still turned out fantastic! my father-in-law from Alabama said it was great as is - he also called it "sawmill gravy" - who knew? will make this again

Cinnamon-Roasted Almonds

made these for my dad for Christmas gift - used pecans instead of almonds & turned out great! not quite like the ones sold at the craft bazaar where the guy makes them right there with some special cooker - but almost as good. Tumbled them around on the cookie sheet with a fork every 20 minutes until hour was done. Even my almost 2-yr-old son loves them - kept grabbing them off the cookie sheet. Used a Sil-Pat to line my cookie sheet for easy clean up. Hard to keep my hands off them!

Favorite Peanut Butter Cookies

Made these for a christmas gift for my brother - with the help of my 5 year old. Very easy, wonderful tasting according to my husband - used half creamy and half crunchy - also used half margarine and half butter. Wouldn't change a thing! Thanks a bunch!
