Chicken Enchilada Soup III
I found this recipe today, and made it tonight. On it's own, it was good, but somewhat boring if you really love the Mexican favors.. After I made it, according to the recipe, I added some ingredients, and took other reviewers advice. I did use corn tortillas to thicken it, and add that special flavor. Black beans, pinto beans, and some whole kernel corn added to the body of the soup. I had no canned enchilada sauce, so used 1 1/2 pkg.'s of dry mix. I added some sliced jalapeƱos and cilantro. Hot sauce, fresh cilantro, fresh limes, corn chips, and cheddar cheese, were served on the side. We're having this again tomorrow, and I'll add sliced avacados as another side. I've never made enchilada soup before, and this was a great recipe to start with. Thank you for sharing.

Best Buckwheat Pancakes
I made this recipe today after browsing the web looking for a buckwheat pancake like my Dad used to make us when we were young. I thought this was it, but it sure wasn't. I'm not going to rate with the stars. Like another poster said, all I could taste was baking soda. I took others advice and added more sugar, and let it set before cooking. They were fluffy, but that's it. I'm wondering about using a tried and true recipe for buttermilk pancakes (which uses baking powder and a little soda), and subsituting buckwheat instead of APF. I found that I could not submit the review w/o stars, so chose only two. I'll try it again, and hate to rate a recipe so low.

Scandinavian Almond Bars
I just made this recipe today. I followed the recipe exactly, including the icing. The cookies are good, but the icing was too runny, so I added a little more confectioners sugar. Still too runny, but because I have never made them before, decided to go for it. The icing sunk into the cookies and disappeared. I don't know if they are going to make the cookies soggy; I'll have to wait and see. Next time I will also double the almond extract as suggested.
