Boilermaker Tailgate Chili

Really REALLY REALLY GOOD! Although I did change a bit in this recipe. I added more celery and instead of ground chuck--I used 2 1/2lbs of chuck steak cut into small cubes (I tried to stay the same size as all the veggies as well). I didn't have any beef bouillon so I had to omit it. Instead of bacon bits I used two strips of bacon. So... lets do a bit of changing. I began by cutting up the two strips of bacon into smaller pieces then putting it in the stock pot with a bit of vegetable oil. Fried it a bit until slightly brown. Put the diced onions in and cooked until transparent. Then added the chuck steak. THEN I added the Oregano, basil, and garlic. Stirred it up a bit then added all the vegetables (celery and the green+red bell peppers). Didn't use green chili peppers or Jalapenos. Let them cook a bit in the bacon fat and added everything else. And as a little treat I threw in some sweet corn (drained) yum~~~ Turned out super awesome!
