Brilliant! what a smashing idea and the fried chicken tastes really like a fat laden fried chicken. Don't get me wrong, I am not a health freak but this is such a sensible way to omit all the grease.

Chef John's Beef Goulash

Dear chef John! As a Hungarian I think your recipe is not bad at all - but - and here is the only big difference. In Hungary if you make goulasch you add the EQUAL amounts of meat and onions! Believe me, if you cook it long and slow, the onions will disolve!

Yes chef John, I am really select of what I like and this is good! I would have given it 5 stars, but chicken stock? is a no no - need to use good and strong beef stock - home-made of course!

Not bad! But - way to much butter - good God with the fat of the chesse and you suggestion of FOUR tablespoons butter I'd have a right fatty broth! Use 1/2 of the butter and still very good!

The basic idea is not bad....but, not enough herbs and spices! And to discard the onions and garlic is a real sin!!! Should be put through a sieve and added to sauce.
