Herbed Corn

I took this to a friend's cookout. It was really good. I wasn't expecting a lot. I mean, it's frozen corn. Someone else said it's better after it sits for a while, and they were right. Letting it rest after cooking really allows the flavors to meld. I got a lot of compliments on this! I followed the recipe almost exactly, just reduced the butter by two tablespoons.

Roasted Garlic Cauliflower

This was delicious! My fiance and I ended up eating the entire head of cauliflower (and I didn't feel guilty because it's cauliflower after all). I added some Italian seasoning and left out the salt entirely. I served it with Hoppin' Johns (black-eyed peas) for a healthy and delicious meal. I'll definitely be making this again.

Juicy Roasted Chicken

Delicious! I stuffed the cavity with some extra aromatics instead of margarine. I initially only rubbed the outside with olive oil, but decided to throw on a few dollops of butter after all (two table spoons on the whole chicken -never killed anyone). It was so juicy! Delicious!

Basic Buttermilk Corn Bread

This was really dense. The flavor was okay though. I'll probably try a recipe with flour next time because I would have liked something that's fluffier.

Creamed Cabbage

This was very good, and I got a lot of compliments on it. Everyone really liked it. It's not "health food" though. While it's good, it's also very, very rich. One reviewer commented that s/he halved the cabbage, which I can't imagine. I actually doubled the cabbage. So, it's very, very tasty. Make and enjoy as long as you're not too concerned about your waistline.

This was ok, not knock your socks off. I added more garlic and an onion. I also used a can of vegetable broth and threw in a ham shank to flavor the broth. It was healthy and easy. I'll probably make it again.

Ginger Chicken with Cashews

We really enjoyed this. I did make a few changes to make it vegan and reduce the sodium. I substituted tempeh for chicken. I left out the broth and corn starch completely. I used low sodium soy and halved it. I used this as filling for lettuce wraps. The crisp lettuce was a nice contrast. We garnished with sriracha. Yum!
