Chocolate Cakes with Liquid Centers

Truly superb! My husband asks for this all the time and I get cravings for it. A chocolate lovers delight and so quick to make. Ridiculously impressive at a dinner party, but for everyday it also works well with cocoa and sugar instead of the chocolate as other reviewers have suggested. Thanks so much for this recipe!

Jack's Chocolate Chip Cookies

Fantastic! I will definately follow the recipe closer next time though as I failed to roll the dough into walnut size balls, dropping it in heaped teaspoonfuls instead. They SPREAD. But they were still delicious.

Chocolate Pound Cake III

Lovely chocolate cake, but very sweet and not the 'dark' chocolate pound I am still looking for. I have a feeling it would be better the next day, but it didn't last that long!

Chocolatissimo

Very excellent - I have made something similar before but with whipped cream folded through instead of the butter, but this is just as yummy. The cake collapses in on itself and will stick to the paper and needs to be carefully peeled off, which is why you add the extra mousse to ice (makes it look neat)- but you can just as easily use whipped cream to top and a handful of mixed berries for a dinner party dessert that will really impress.

Melting Moments I

Classic! We sandwich two biscuits together with the icing for a real cafe-style cookie. Very easy and yummy. Add some orange zest to the dough and some melted semi-sweet chocolate to the icing instead of the food colouring for total luxury.

Baker's Secret Pie Crust

Very easy to make, I chilled it just a few short minutes and used all butter, no shortening as we don't really good with that in Australia, and mine actually was quite dry if anything, not moist as other reviewers have found. I made cake flour by substituting a 1/4 cup corn starch for the rest normal bread flour too as that's how we make cake flour.

Old Fashioned Fudge Cake

Very easy to make. I ommitted the sour cream and only put in 1 cup of sugar as I couldn't get bitter chocolate only the normal dark kind, but it rose beautifully and tasted great.

Pumpkin Apple Streusel Muffins

Delicious! I didn't have any pumpkin puree so I just scooped out and mashed up a cup of roasted pumpkin, and I used what in Australia we call mixed spice instead off pumpkin pie spice, but otherwise made the recipe exactly as written.

Cream Puff Shells

In Australia we know these as profiteroles (a French dish) and people make a spectacular wedding cake out of them by building the filled puffs into a pyramid and covering them with a hard toffee glaze. As plain profiteroles we serve them filled with whipped cream or custard and covered in chocolate sauce. This is a very good recipe! My oven is gas and only needed 220 degrees Celcius, not 230 for the first 20 minutes. One trick I know is that if some are still a little raw inside it is not unheard of just to scoop out the uncooked bit!!!

Yeast Doughnuts

I had to watch them very carefully when I was cooking as they went brown very quickly, but these were yummy. Some with a blob of jam in the centre were yummier still.

Jamaican Beef Patties

I only made the pastry portion, which was very easy even for me, and turned out very nice and flaky. It was almost like an indian samosa - I filled it with leftover lamb curry and peas. I used grease proof paper to roll it out as I added a little too much water and it was a bit sticky.

Easy to Make Ginger Cookies

A very nice, simple cookie that my husband actually ate and asked me to cook again - the only other type he likes are Anzac biscuits which are also crunchy. I want more crisp crunchie cookie recipes!!! The dough was a nice consistency and handled very well. I will add a bit more ginger next time.

English Toffee

I'm actually quite scared of cooking confectionary because of the hot sugar, but this was very easy to make - I halved the quantity of butter after reading the reviews as I prefer less oil (although seems a bit beside the pont to be counting calories while making toffee!!) and it came out fine. I used a non-stick frypan and just kept cooking until it caramelised (turned brownish - about 12 minutes). I will definately be using this recipe again for christmas pressies and for school sweets-days.

Croutons

I'm glad to see other people make their own croutons! They are so easy and quick to make and are great to jazz up a salad. I toss cubes of bread in olive oil and freshly crushed garlic and sprinkle with a little grated parmesan before cooking ... yum!

Ultimate Double Chocolate Cookies

Very nice but you do get overwhelmed with the chocolate! I made half quantities and still got about 30 biscuits, so you must have bigger walnuts over ther than we do in Australia!
