Eggplant Lasagna

I have made this many times. I slice my eggplant length wise like a noodle. I also add cottege cheese and ricotta cheese just like you would making Lasagna with noodles. Sauce on the bottom of the casserol dish and then the eggplant sauce cottege cheese, ricotta cheese and Mozz. cheese. Then eggplant and repeat till it is just the eggplant and sauce and Mozz cheese on top. My husband now likes this better than using lasagna noodles.

Glazed Apple Cream Pie

I made this exactly the way the recipe was. The only thing I did was used 4 apples. I did not think it was to sweet. My guests thought because it was served chilled it tasted like apple by alemode, without using ice cream. I am making it again today for a party we are having tomorrow!

Chicken Marsala

I made this with the few changes I read in the reviews. I took the chicken out after browning and then did the mushrooms and onions. Stirred in the Marsala Wine only did not use the other. Also added a few cloves of Garlic. After the mushrooms and onions were cooked a little while put the chicken back in for about min's. Then I removed the chicken and thickened the sauce with cornstarch and water mix. It was very Yummy! Will make again and my husband does not like boneless chicken breasts thinks they are dry and have tried many recipes and this one he loved!

Prime Rib

I made this almost to the letter of the recipe. I cooked it at 500 for 40 min's (5 min's per lb) Then shut the oven off for 2 hours and it was perfect. If you like your rare which we do. Will cook my prime rib like this every time.
