Absolutely Ultimate Potato Soup

One of the better potato soup recipes I've tried. Took a lot longer than 40 minutes to make. Fair amount of prep work. I will try to lighten this up for future batches. I made it for a high calorie dinner for my underweight son.

To Die For Fettuccine Alfredo

I cut out half the butter. I was worried it was too salty when I tasted the sauce before adding the noodles, but once the noodles got incorporated it tasted sort of bland. Next time I'll have to tweak the salt levels a bit more. I also added the noodles straight from the pasta water to the sauce and the extra starchy water helped the sauce stick to the noodles after tossing with the sauce for a little bit.

Corn Dogs

Excellent batter. Make sure the hot dogs are really dry before trying to coat. I turned the leftover batter into hush puppies. YUM!

Delicious Black Bean Burritos

Butterscotch Oatmeal

Very good. Addition of the egg makes this creamier without using half/half or heavy cream. However, it's even MORE filling than normal oatmeal, given the protein added by the egg. Modifications for me: 1/4 c. + 1 T of brown sugar, sprinkling of cinnamon, dash of vanilla, and fresh grated nutmeg. Made it at night with the plan to reheat in the AM!

Apple Crisp II

Delish. Cut the recipe in half, used 6 apples: 3 honeycrisp and 3 granny smith. Added fresh nutmeg to the apples and a dash of cinnamon to the crumble topping. Excellent served with dulce de leche ice cream.

Chicken Milano

Pretty good! I did modify just slightly: added about a tablespoon of parmesan cheese. The reason I give it four stars is that it took three pans to make it. It didn't produce all that much sauce. But I think the sauce can be very flexible...adding mushrooms/artichokes along with the chicken would be good, and I think that it could easily be made vegetarian by sauteeing up a portobello mushroom instead, and using veggie broth.

A Good Easy Garlic Chicken

Very good! Reminds me a lot of "Chicken on the Barbie" from Outback Steakhouse. I didn't have garlic powder so I just smashed a clove of garlic with the back of my knife and let it warm up along with a butter/olive oil combination in the pan. Then when they got kinda soft and oil was hot I took them out so they wouldn't burn and ruin the flavor. I did make a pan gravy from flour, milk, and added pepper. Wasn't entirely necessary though, the chicken was so flavorful. Next time I will probably serve with BBQ sauce on the side and probably won't do a pan sauce. I'll probably add some cayenne to the salt/powder mix to spice it up a bit.

The Best Rolled Sugar Cookies

I halved the recipe and was able to make about 18 cookies, 2.5 inches in diameter. They turned out fabulous and a plate of them that were iced with cream cheese frosting disappeared in about 2 minutes!

Cream Cheese Frosting II

It was pretty good, very simple, but a little too cream cheese-ey for me. I added a little more vanilla to the mix and powdered sugar, but then it got a little thick and hard to handle so I added about a half a teaspoon or so of milk.
