Bean Rarebit

I served this over toast with a fried egg on top, like the recipe suggests, and it was DELICIOUS! And easy to make! I used skim milk, as it was all I had, and it didn't seem to make a difference. This is definitely a keeper!

All American Roast Beef

I followed the directions almost exactly. The only changes I made were not to tie it, and also to cut 3 long slits across the top of the roast and stuff these with sliced garlic cloves (3 large cloves). I thought that the cooking directions were spot on, the roast turned out perfectly and was delicious! The spices were just right. My hubby loved it too. I don't think we will be making a roast any other way from now on.

Chocolate Raisin Oatmeal Muffins

Overall, these are pretty good muffins. After reading the other reviews, I did make some changes. I used 3/4 cup all-purpose flour (minus 2 tablespoons) and 3/4 cup whole wheat flour, and I doubled the cocoa powder (which is why I reduced the flour by 2 tablespoons). I used quick cooking oats instead of regular oats, 1/2 cup raisins, and 1/2 cup bittersweet chocolate chips. I also used skim milk, and omitted the oil, instead using 1/2 cup applesauce, which seemed to make the batter the right kind of consistency (as I was adding the wet ingredients, I could see what others meant about the batter being too thick if you stick to the amount of liquid used in the original recipe). The muffins came out of the oven moist, with a slightly crusty top, and are quite tasty.

Lighter Chocolate Chip Pancakes

My hubby and I both thought these were very good, and liked that they are a bit healthier than other pancake recipes. I used 1 cup whole wheat flour and 3/4 of a cup all-purpose flour. I also used 1/4 cup applesauce in place of the margarine, and used brown sugar instead of demerara, as I didn't have any. Delicious, a nice light dinner (I'm a BIG fan of breakfast food for supper).

Molasses Raisin Muffins

These are delicious! I've been on a bit of a "healthy muffin" kick lately (they're great for a quick breakfast, but I'd rather not be eating glorified cake every day), and these are among my favourites so far. The only changes I made were to replace the butter with applesauce, use 1/2 cup raisins and 1/2 cup bittersweet chocolate chunks (SO GOOD), and because the batter tasted somewhat bitter to me when it was all mixed up, I added 1/4 cup honey and 1/4 cup brown sugar, based on suggestions from other reviewers. I will absolutely be making these again!

Butter Roast Chicken

Cheesy Butternut Squash Pasta Sauce

TO DIE FOR! Rich, buttery, and a delicious mix of sweet and savoury. I am in love (shhh, don't tell my husband...). I followed this recipe almost to a T, the only changes I made were to use a slightly different blend of cheeses (parmesan, asiago, smoked provolone, and mozzarella, as this was the only Italian blend my grocery store had to offer), and also, once I had simmered the sauce to my desired consistency I found it a bit too chunky for my/my husband's liking, so I pureed it in the blender. It came out so creamy and rich and wonderful,my husband and I both loved it and we will definitely be making this again. SOON! I think I will try it with heavy cream in place of the milk as well, just for a change, as that would make it even creamier.

Red Garlic Mashed Potatoes

These were very good!! I left out the sugar, as other reviewers mentioned doing. To cut down the calories, I also cut the butter in half and omitted the half-and-half, and used 1/2 cup of plain fat-free yogurt instead (next time I might use 3/4-1 cup of yogurt). The tangyness of the yogurt worked really well with the garlic in the potatoes. With these changes, I think these will be my go-to mashed potatoes from now on. I also didn't have any steak seasoning, so I left that out.

Oatmeal Biscuits

SO YUMMY! Especially warm with a little bit of maple butter (also from this site) on top. MMMMMM! The only change I made was to use butter instead of shortening. These are wonderful as is, but I would love to try some adaptations as well. I'd love to try them with browned butter. Also, maybe with some different flavourings, like vanilla, maple, or almond extract. Adding raisins or even chocolate chips might be tasty too. Definitely an awesome and easy recipe, thanks Barbara!

Vegetable Beef Soup

This soup is very tasty! I did make a few small changes. I sauteed a medium yellow onion and the 2 cups of sliced mushrooms in 1/4 cup of olive oil to start (based on other reviews), then added 1 1/2 pounds uncooked cubed beef until it was fairly well browned. I then followed the recipe mostly as is except, like others, I doubled the amount of beef broth, and added a few seasonings (Italian seasoning, oregano, garlic powder, and 2 pinches of ginger). I didn't have any green beans, so I omitted those. I also cut up 4 stalks of celery and put those in the soup, and used canned peas instead of frozen. Then I let it simmer (uncovered) for a little over an hour on medium low to allow the flavours to blend well. My husband loved it too. We will definitely be making this again.

Gingerbread

This was very tasty and moist. After my mom tasted it, she wanted to know where I'd gotten my grandmother's gingerbread recipe from, because this tasted like what she remembers her mother her mother making when she was a child (which is a good thing!) The only changes I made were to replace the water with milk and add 1 tsp cinnamon, 1/4 tsp nutmeg, and a pinch of cloves, as other reviewers suggested.

Honeyed Chicken

My husband and I thought this was delicious. The curry powder gave the sauce a really tasty, unique flavour. I did pierce each chicken piece (I used drumsticks) with a fork a few times on each side before brushing on the sauce, to allow it to seep into the chicken. I added a pinch of cayenne, cinnamon, and crushed red pepper flakes as others suggested. I look forward to making this again.

Parmesan and Basil Chicken Salad

Welcome to my new favourite recipe! So easy and so good! I did cut the basil in half as a few reviewers suggested. And I pureed 1 1/2 stalks of celery with the mayo and basil, and finely chopped the other 1 1/2 stalks and added those to the mayo mixture at the same time as the chicken. I also omitted the garlic, but that was just personal preference. This recipe is definitely a keeper.

Quick and Easy Vegetable Soup

I've been looking for a tasty homemade vegetable soup recipe and I'm happy to say this one surpassed my expectations. It's delicious, and even my hubby who HATES vegetable soup with every fibre of his being, enjoyed it. He even had seconds. I changed some ingredients, this seems to be a very adaptable recipe. I used vegetable broth and V8, doubled the amount of these and omitted the water. For veggies I used carrots, red potatoes, celery, fresh roma tomatoes, fresh green beans, one can of peas, and before I added anything to the pot I also sauteed a medium onion and two cloves of garlic in 1/4 cup of olive oil, based on suggestions from other reviewers. For spices I used cajun spice instead of creole (it was all I had), a bay leaf, oregano, garlic powder, a couple pinches of ginger, sea salt, and fresh ground black pepper. I also chopped up about a tablespoon of fresh flat-leaf parsley and put that in. I definitely see this soup in my future. Thanks so much for the recipe!

Harvest Pork Stew

I was looking for a simple pork stew recipe with lots of vegetables and was very happy to find this one. It was very tasty and the apples really did complement it well. I left out the squash and sage as I didn't have any, and used golden delicious apples instead of MacIntosh (again, because they were what I had on hand). I also used cornstarch and water, as others mentioned, to thicken it up a bit. My husband and I both loved it, although I thought it could have maybe used a wee bit more seasoning. I think I will definitely try it with the squash next time, and possibly some other vegetables and spices (maybe some fresh parsley and thyme and some sea salt and fresh ground black pepper). It is a keeper though.
