Broccoli Slaw

Delicious as is - I wouldn't change a thing! I do recommend letting the slaw sit for severla hours before eating it....it really brings all of the flavors together.

Coconut Curry Tofu

Seriously how is this recipe almost 5 stars? Maybe people who have made this have never had a true coconut curry, because this recipe is bland and flavorless. Huge disappointment.

Tofu Lasagna

I love ricotta in my lasagna, so I tried most of the modifications suggested in LJ's review (below): added 1 tsp basil, 1 tsp italian seasoning, 2 cloves garlic to the tofu, then layered 2 c. sauce with the cheese/tofu mix. MMM!

Blonde Brownies I

Baked Eggs in Canadian Bacon Cups

Delicious! I added a bit more pepper than called for in the recipe because I like lots of veggies. I also added some shredded cheese between the veggies and the eggs. Perfect breakfast for the SBD.

Thai Green Curry Chicken

Pretty tasty. I was worried when I first started cooking this - the sauce was really thin - but it thickened nicely as it cooked, and had great flavor. I'll make it again.

Mock Tuna Salad

WOW. SO GOOD. As a vegetarian, I must say this is one of the best "fake meat" recipes I've found. I actually like that it doesn't have the hardcore fishiness of real tuna, but has all of the other yummy elements! I chose to use chopped baby dill pickles instead of sweet relish, but otherwise, did the recipe exactly as stated. DELISH. Served it up tuna-melt style with cheese and tomato on an English muffin.

Angel's Old Fashioned Beef Stew

Great recipe. I have no idea why anyone would say this has no flavor, because it was rich and delicious. I made only two small changes: I had to use four 14-oz cans of beef broth (three 10.5 oz would never have covered all of the beef & veggies); and in the end, I mixed 1.5 tbsp cornstarch with a bit of the broth from the pot, then added it to the stew to thicken. This worked much better than the flour suggested in the original recipe.
