Black Bean Vegetable Soup

I made this exactly as the recipe states. I added one chopped chipotle pepper in adobo sauce with maybe a tablespoon of sauce.... This turned it into a five star plus recipe :)

Slow Cooker Stuffing

I've made this recipe for years and just made it again :) Happy Thanksgiving! I thought I'd share my modifications. Make sure you use a really dense bread like ciabatta bread and make sure it's really dry. I like to add a 1/2 cup of currants to it and about 2 cups of cooked sausage with sage. I never need as much chicken broth as it calls for, so add it slowly-not all at once. This is a great recipe and frees up your oven of other things on turkey day!

Fruit Cocktail Bars

I was really excited to try this recipe because my mom used to make them when I was a kid. They were my favorite treat! These bars are really good and just like she made. I remember that there was more fruit in it than this recipe calls for. Next time I will try this recipe exactly with one excepton.....I'll add another can of fruit cocktail with as much of the juice drained out as I can. I think it's moist enough but just needs more fruit. This is still a yummy recipe and worth making again. Thank you for sharing it!

Greek Chicken Pasta

I've made this recipe before exactly as shown and it's good. I read many of the reviews and made it again with revisions and it is 5 star! Here are my changes. I added pepper to the pan when I cooked the chicken. I added the artichokes with a couple of TBSP of their marinade, a can of diced italian seasoned tomatoes with their juices instead of the tomatoes,feta cheese, about a cup of diced Asiago cheese,parsley, lemon juice, oregano and about a cup of chopped kalamata olives. These changes made it a keeper!

Loved it, but had to make some modifications...added 1/4c. of tomato paste as it was a little bland. I think using all stock and no water would have improved it. I also used tortellini instead as this is my preference. Good soup :-)

I did not care for these biscotti. I made the recipe as written. I think the unsweetened cocoa powder should be decreased. I will continue to search for a great chocolate biscotti recipe

Sour Cream Coffee Cake III

This is such a forgiving recipe! I didn't wait for my butter to get to room temperature. I used grey sea salt that was too chunky (didn't have reg. salt). Even with these "user" errors, the coffee cake was fantastic. I can't wait to make it again correctly :-) Yum, yum, yum!!!!

Shrimp, Leek and Spinach Risotto

I will rate this a 5 with the following revisions: -2Tbsp olive oil for the rice and 2Tbsp for the leek mixture -Def. needs more veggie broth, 6-8C depending on your rice -More like 1 1/2 tsp fresh ground pepper -1/2 tsp fresh ground salt at the end -1/2 lemon squeezed over risotto at the end and then blended just before serving. I love a hint of lemon whenever I cook with shrimp... This is a keeper risotto recipe!

Roasted Chicken with Risotto and Caramelized Onions

This was EXCELLENT! Very easy to make. Enough for an entire meal. I didn't alter the recipe. I used meat from a roasted chicken I bought at the store. I will absolutely make this again! An update: I've made this many, many times. It is a wonderful and versatile dish. I rec. using the highest quality balsamic vinegar you can get your hands on....same with the chicken stock now that I think of it :-) I've chopped roasted asparagus in just before serving...yum! I also think that shaving some parm. reggiano over it is a must before serving...

Pumpkin Cookies V

My first two star rating. These had very little taste to them, despite adding extra cinnamon. It had a nice cake-like texture, but the shortening overwhelmed the taste of them. I wonder if subbing butter-flavored shortening or butter would be good. Overall, not a winner-won't try again.

Tortellini Minestrone

This was EXCELLENT! I made the following changes: I used 1/2 italian sausage and 1/2 spicy italian sausage, 3 garlic cloves, Cento whole canned tomatoes (which I chopped before I added them), and cheese tortellini from Pasta & Co. here in Seattle. Fresh tortellini made a huge difference if you can find it. If not, I'd sub. frozen cheese tort. from the grocery store before I'd use the Bertolli brand in the cheese section. Yum!

Chicken Enchiladas I

Great recipe. I also thoughtthe sauce was a bit runny, so I reduced it a bit. I had lots of leftover sauce, so I used it on top instead of taco sauce. Yummy!

Shrimp with Pasta, Sun-Dried Tomatoes, Artichokes and Basil Bacon Sauce

Excellent recipe. I used Canadian Bacon as the recipe called for, but I think next time I'll try it with Pancetta. I used regular penne pasta with excellent results. This would also be great with chicken instead of shrimp as an alternate recipe. Thanks for this submission!

Supreme Scalloped Potatoes

Didn't change the recipe at all. Boiled the potatoes the night before to save time, refrigerated them until I was ready to cook the casserole. I added a bit extra cheese over the top. Great recipe.

Glazed Ham

Used this recipe with a precooked spiral sliced 9lb. ham. As suggested, I cooked for 1 hour on 250 degrees, then followed the recipe, pouring the glaze over the ham. I patted some brown sugar over the top, but that's just my preference. It cooked for about 2 hrs more and was done and delicious. Thanks!

Chocolate Cookie Cheesecake

Thank you for this great recipe. I continue to enjoy my leftovers! My suggestions-I think that the oreo cookie crumbs for the crust caused the crust to be gooey (probably a function of the white center). Next time I will use chocolate Teddy Grahams or another plain chocolate cookie to avoid this. Also, the recipe calls for 1 1/2 Cups of cookie crumbs to be added after 1/3 of the batter is ptu in the crust. If you read the instructions however, you should add cookie pieces. This makes a HUGE difference, because the cookie pieces (the bigger the better) are what make this cheesecake so good. It's yummy to bite into a piece of cake and get a cookie surprise. Overall, a great cheesecake. Will add to my recipe book!
