Creamy Rice Pudding

Fantastic rice pudding. It has the perfect texture and flavor. I will cook extra rice in the future just to make this dessert. YUM!

What's not to love? I had to please some weight conscious guests so I used light cream cheese, left out most of the sugar and replaced the Whipped cream with light Cool Whip. I also mixed 1/4 cup Kahlua in with the coffee. It was delicious and the effort to lighten it up was much appreciated.

Chunky Tomato Potato Soup

This is a great recipe!! My husband hates potatoes in soup and he had two bowls. I served it with beer bread. Perfect for supper on a cold Sunday night. Also, I let it simmmer for much longer than called for in the recipe.

Clare's Whole Wheat Potato Bread

This bread required more flour than the recipe called for. I used about 1 cup more and still had a really soft dough. The final result tasted pretty good though. I probably won't make this again.

Scottish Shortbread IV

Wow!! I was hoping to duplicate some shortbread from a gourmet store...perfection. Next time I will place them further apart on the baking sheet as they spread just enough to touch and lose the nice smooth edge. Mine needed the full 25 minutes. Great cookie!!

Schlotsky's Bread

Having never been to Schlotsky's, how do you slice this for a sandwich? I can only assume horizontally through the middle. Light, yummy taste. Weird shape. Maybe I'll try a loaf pan next time and see what happens.

Gourmet Chicken Pizza

This was really good. I didn't change anything. My picky children loved it and my not so picky husband pigged out. Quick and easy with the leftover grilled chicken breast that I usually have in the freezer.
