Light, simple, tasty, and EASY. This would be good with a really hardy rye or multigrain bread. If you plan to have as leftovers, pull some out before the cabbage is fully cooked so the cabbage doesn't get mushy when reheated later.

Sunshine Morning Muesli

If you use Greek yogurt like I did, you may need to use a bit more than the recipe calls for as it is pastier than regular yogurt. My batch was REALLY thick!

Butternut Squash and Turkey Chili

This is a pretty mild recipe, so if you like heat you will need to add some cayenne or chipotle. I roasted my diced squash in the oven and stirred them in at the last minute. They added a really nice bite of sweet.

Lima Bean Bake

Easy recipe. I would recommend undercooking the lima beans so they will finish cooking in the casserole and absorb more liquid. Mine were a bit mushy from overcooking.
