About this Cook
I will cook anything as long as there are no nuts or mushrooms. Does that make me sound like I'm 4 years old? I can't help it! Actually baking is like therapy for me. I'd cook all day if I had time.
My favorite things to cook
Love, love, love baked goods! I'd pick pie over eggplant any day of the week. Luckily I started going to the gym a few times a week to even out the odds. I love stuff I bake a million times over store bought items. The cool thing is that my son feels the same. He's even making his own cookies for his friends now. Gotta love the teenagers!
My favorite family cooking traditions
The whole family ends up coming over every holiday. It's a huge thing! You know I wouldn't have it any other way but next Christmas might be potluck.

Everytime I cook I get happy. That's not a pyschological problem is it?

Vegan Corn Muffins
Second time using this recipe today. My vegan friends really like it and requested I bring it to their party tonight. I doubled the salt, added diced chilis, and used coconut milk (or rice milk) instead of water. I also fried and cut up veggie dogs for an added effect. They are still a tiny bland to me so may add some spices or onion next time.

One Bowl Chocolate Cake I
I've made this a couple times and have received huge reviews each time. I did not alter the recipe in any way and made a two layer cake one time and cupcakes the other. Both were perfect. I used 7 minute frosting because I like the taste and color contrast but would be amazing with a coordinating chocolate buttercream or something. Even my sister, who usually skips dessert, went gaga over this. Thank you for sharing, Shirley!

Coconut Pound Cake
So moist and delicious! I substituted coconut milk, as another reviewer suggested, and added a tiny bit of salt. I didn't have anything to measure the 3.5 oz of shredded coconut so I used a 1/2 cup in the batter. Made cupcakes with them and used a coconut cream cheese frosting. Oh man, I'm in love. Yay- a new favorite!
