Best Ever Chocolate Cutout Cookies

This is my go-to recipe for rolled chocolate cookies. As per other reviewers, I add a tsp of vanilla, occasionally add an extra egg yolk if I'm baking other stuff that'll use the white, and I always roll the dough out on cocoa powder. For cocoa, I use about half Hershey's Special Dark (which is a blend of regular and Dutch) and half regular. This makes the cookies very dark, which offsets the sweetness of royal icing decorations very nicely. I also roll them with my 1/4" guides and bake for 8 minutes.

Iced Pumpkin Cookies

I needed something to use a can of pumpkin I'd dropped, and I wanted to use some shaped holiday silicone pans, so I was looking for something between a cookie and a muffin and this fit the bill nicely. I skipped the icing; they were plenty flavourful on their own. However I'm giving it 4 stars instead of 5 because they're really more muffiny than cookie-ish. Don't make this recipe and expect a cookie.

Mashed Potato, Rutabaga, and Parsnip Casserole with Caramelized Onions

Delicious! A warm, wintery treat of a side dish. I made it before my husband put a roast in the oven so he was able to pop it in for half an hour at 325 which was the roast's temperature, then he upped it to 375 for 15 minutes while the roast rested. This makes this a flexible side dish to go along with various meats. Excellent! I did end up with two 13x9 pans' worth, though, so next time I'll halve it, although it's hard to find rutabagas under 2 lbs.
