Fettuccine with Sweet Pepper-Cayenne Sauce

Good but spicy! I added sweet Italian chicken sausage which complimented nicely. I followed everything as is except added the sour cream after the broth simmered as others suggested and that worked great. It was too spicy for me with 3/4 tsp of cayenne...I'll make again but use less pepper!

Outrageous Chocolate Chip Cookies

Neither my husband nor I really cared for these. He actually made a face when he tried them and he eats any kind of cookie around. My tastebuds weren't sure what I was eating, which I think is part of the problem. Too many different tastes going on. I followed the recipe exactly. I won't make these again.

Sour Cream Pork Chops

The only change I made was to season the sauce and added a little more flour to thicken it faster. Otherwise followed the recipe as is and it was good. Pork fell apart it was so tender. My husband never likes my cooking and he said twice it was good!

Tender Tomato Chicken Breasts

It was ok. I cut up the chicken into chunks to cook faster. I didn't have onion powder and read from others that this was bland, so I seasoned the chicken with salt, pepper, lots of adobo, garlic powder, and a bit of cayenne. I didn't use chicken broth at all since others said it was too watery and just used a whole can of diced (that's what I had) tomatoes with all of the juice. I ended up adding a bunch more adobo and garlic to the tomatoes too. I served over rice. There was plenty of liquid and it tasted fine, but aside from the heat from the cayenne, I really didn't taste much else. It was fast and easy, but I don't think I'd make again.

Pasta Salad a la Honeybear

Delicious! Time consuming but worth it! I left out the onion because my husband hates them, but otherwise followed the recipe exact. SO good! I would try with pepperoni or chicken too!

Quick and Easy Green Chile Chicken Enchilada Casserole

Very good! Like other reviewers, I added taco seasoning to the chicken then mixed it with the sour cream before spreading. I also didn't char the tortillas and cut them into fourths. I followed everything else in the recipe as directed. I could only find 10oz cans of the enchilada sauce and ended up using 2, and that was more than enough. I mixed in a little cheddar cheese with the jack. I should have let it sit a little longer before cutting into it because it was a little runny, but not too bad. Delish!

Greek Penne and Chicken

So good! After reading other reviews, I made a few modifications. I used 3/4 of the box of penne instead of all of it, I used 1 1/2 large tomatoes to add some juice, I used 6oz of feta, and I added kalamata olives. I also used just a little olive oil in the beginning instead of butter. I didn't find it to be too dry, but I did add just a little of the pasta water to the pot at the end to make sure everything was covered. I used regular canned artichoke hearts, not the marinated like others suggested, and I found them fine. I'm looking forward to the leftovers - I bet it will be great cold too!

Cherry Oatmeal Cookies

These are really good. After reading some other reviews about the cherry not coming through, I doubled the amount of juice and added a whole 12oz jar of chopped cherries instead of just 1/2c. The cherry flavor was there but not overpowering and there were enough pieces that each cookie got plenty of cherries. I don't really taste the walnuts in them, so I don't know if they're necessary or not, matter of preference I guess. Way better than raisins!

Tomato Pork Loin Chops

I followed the recipe exactly except I used diced tomatoes as others suggested instead of tomato sauce and water and I used less red pepper since I didn't want it too spicy. It was ok. I made the mistake of following the cook times suggested so my meat was tough and I still used too many pepper flakes so it was too spicy for my taste. Don't think I'd attemt again.
