Black Bean Vegetable Soup

Reviewed: Apr. 10, 2006
I made it to the recipe until the end. I added juice of half a lime and cilantro. The next day i remembered the avocado i had bought and added it cubed. It looked colorful and pretty with the yellow, orange, and green. Right before serving, I added a slice of colby-jack cheese on top to melt. I really prefer it with the avocado. All in all a nice healthy soup.

Italian-Style Spaghetti Squash

Reviewed: Sep. 29, 2006
i enjoyed this recipe. i made a few minor adjustments. i added minced garlic with the onion, i added a few pinches of italian herbs, thyme, oregano, and basil when i added the zucchini. i also just juiced half the lemon and added that with the tomatoes rather than slicing it. i also added a splash of red wine when i added the tomatoes and lemon juice. all in all a nice, pleasant, tasty recipe. i forgot how much i love spaghetti squash!

Pumpkin, Sweet Potato, and Leek Soup

Reviewed: Sep. 30, 2006
Very tasty soup. the sweet potatos, pumpkin, and leeks meld together well and add depth to the flavor. i made it to the T except instead of chicken broth, i used homemade vegetable stock. i was a little skeptical before i pureed it, but it turned out nicely. i used just a smidgen of the spices, i didn't want them to overwhelm the soup. i prefer a curried pumpkin to a sweet pumpkin taste. i must admit peeling a pumkin is a pain in the butt.

Balsamic Vinaigrette

Reviewed: Sep. 30, 2006
this recipe has become a family favorite and staple in my house. my mom asks me to make it almost every week. i make it to the recipe, except i also add some herbs from my mccormick italian herb seasoning grinder. i was skeptical using equal amounts of vinegar and oil, but it turned out really nice. the mustard gives it a nice tang w/o being overwheleming. along with homemade croutons, this makes the best salad! thank you for the recipe!

Reviewed: Sep. 30, 2006
A little grainy but delicious none-the-less. Great, quick, easy recipe for when i get a chocolate craving! also i substituted almond extract for some of the vanilla, either 1/2 tsp or 1 tsp, i can't remember.

Asparagus and Ravioli with Dijon Alfredo Sauce

Reviewed: Sep. 30, 2006
YUM! This is one of my favorite recipes on this site. the first time i made it, i didn't think it went well with cheese ravioli, it was too rich. now i always make it with farfalle, and also add sundried tomatoes to the asparagus. as suggested by others, i cut down on the mustard amount. i first used 2 tbsps and thought that was scrumptious. then my sister suggested we use a little more, so i added 1/4 cup. i think i liked it that way better. i also have only used the grey pupon country dijon. it has mustard sseds in it and makes the sauce have a more visual texture. i also cut ethe asparagus in smaller pieces, 1" long perhaps and i add extra garlic. i also have experimented with substituting asiago cheese for the parmesan, yum!

Chicken Makhani (Indian Butter Chicken)

Reviewed: Sep. 30, 2006
YUM. This is requested often in my house! i use chicken breasts, because that's what i like, and i use 1/4 cup ground cashews as a thickening agent instead of the cornstarch and water. Very good flavor.

Spring Risotto

This was my first attempt at risotto. It was also my first encounter with fennel. It is very good, but pretty rich. it's hard to eat a lot of it at once.

Basic Fondue

Reviewed: Sep. 30, 2006
Yum! tastes just like the melting pot's! i half the recipe so it will all fir in my fondue pot. i also substitute a cup of beer for the milk. I serve it with apples and panera sourdough bread. it is also good with broccoli and carrots. I also usually add 2 small cloves of garlic, but i love garlic.
