Chocolate Chip Bundt Cake

Wow! Chocolate decadence deluxe! Doubled the recipe and used only butter Crisco,unbelievably was out of oil, used what chips I had on hand minis, regular, and white, baked twice as long and chocolate heaven came out of the oven. My family moaned when I announced it was for todays celebration. Of course I cracked and half the cake was gone without even adding the ganauche. Leftovers are even better warm.

Maple Cajun Mahi Mahi

This was a nice surprise. Mahi mahi isn't my favorite fish so the stronger flavor of sweet then spice was delightful. I used homemade creole seasoning so it had the heat level that suits us, Cajun would be nice too, didn't have time to make my own. I marinated the fish for an hour in the seasoning and maple syrup in a ziploc. DH loved it too so will make again.

Sweet Slow Cooker Ham

Made this for Easter, loved that it was fix it and forget. Used only about 1 1/2 cups of brown sugar and it turned out fantastic. Love the glaze, thickened it on the stove with some corn starch. Everyone gave it high marks around my table. Didn't even know that Tazo had a Chai concentrate before this! I used the Decaf.

Healthier Southern Peach Cobbler

Loved this! Used even less sugar than the recipe called for, left out the white sugar, and none for the top. That's what probably is making everyone's topping burn. Mine was fine at 30 mins. Cut the flour to half in the topping and added oats, I like a more substantial topping.

Coconut Date Bars

I made 4 double patches today, different combos of extras, they are all great! You do need to pulse and/or run the food processor at least 2 or more minutes to get to the ball state. I used a combo of Medjool and Deglet Noor dates, since the medjools are more expensive but as another reviewer pointed out are more moist and sticky. I combined the coconut (half unsweetened), whole almonds, and dates in the processor then mixed in the extras by hand, literally. I too left out the oil, although did coat my hands with it to press the dough. I made Almond with Choc Chip with sliced almonds and mini chips, Cashew Cranberry and Chia, and Pecan Cherry. Having the chunks of the fruit and nuts mixes up the texture a bit. To form bars I lined a loaf tin with plastic wrap and then pressed in the dough, turned it out and then cut into pieces without refrigerating first. Put into plastic bags to make a quick grab and go snack. A double batch made 10 squares about 1/2 to 3/4 in thick. Will be making these for a long time to come!! Perfect gluten free snack! With more time I'd like to try some additional flavorings like spices or peels.

Mediterranean Quinoa Salad

This was wonderful! Have never made quinoa before so I think I should have left it steaming a few more minutes to dry out more because my salad came out wet even without all the liquids(which I had combined). It didn't bother the taste though or turn people off, this was a hit at a potluck. I did add halved cherry tomatoes and cucumber, left out the chicken.

Best Carrot Cake Ever

This is easily the best carrot cake I have ever made. Moist is the best descriptor and adequately huge and impressive dressed up with cream cheese frosting and walnuts for a large crowd. Make 3 rounds to get this effect. Have drained the carrots and pineapple but not dry and have been very happy with the outcome. Highly recommend this even with the extra effort and time required, the input definitely makes the end product so very worth it.

Slow Cooker Pumpkin Steel Cut Oats

Increased the oats per reviews and decreased cinnamon. Still was watery after all night on low. OK flavor used turbinado sugar hubby liked it. Would make again with less pumpkin. Thinking how to convert the leftovers into muffins.
