Coconut Cream Meringue Pie
The addition of the coconut milk is wonderful imparting a great flavor! I ended up using a combo of what I had on hand to total 3 cups of whole milk/half and half/coconut milk. I'm sure any ratio would be great. Also was short on corn starch so supplemented some tapioca flour, so added less still with a firm result.

Cheesy Chicken Meatballs
Hosting a grain free baby shower and thought I'd try these out to stay in the healthy zone. Substituted almond flour for the bread crumbs and since I didn't read the reviews used two eggs which made things gloppy. Added about 2 more Tbsps almond flour and used my cookie scoop with spring mechanism which worked great. Made 35 smalls balls, baked 15mins. Used Laughing Cow Swiss since didn't have cream cheese. Served with homemade barbecue sauce. Excellent. By themselves the seasoning seemed a bit strong, but with the sauce it was fine.

Cheddar Bay Biscuits
Didn't have time to read any reviews so just made as written and they came out beautiful and tasted EXCELLENT! They seemed a bit soggy after brushing with butter mixture so popped them back in the oven for a minute or two which did the trick. Used the two spoon method to scoop onto parchment, too gooey for the cookie scooper. Recipe made 22 good sized biscuits.
