Six Can Chicken Tortilla Soup
I followed many of the suggestions in the other reviews and was THRILLED with the result! I have been obsessed with Moe's Southwest Grille's Chicken Tortilla soup and now can make my own comparable version!
I used 32 oz (UNCONDENSED) chicken broth, 1 can each of Cream of Chicken and 98% Fat Free Cream of Chicken soup (do not add water), 1 small chopped yellow onion, Green Giant Mexicorn to take advantage of the red and green peppers (drained), 1 can of organic black beans (drained and rinsed very, very well), 1 can diced tomatoes with mild green chiles (not drained, just dump on in), and the canned chicken breast in water. Added salt, pepper, chili powder and garlic power to taste. Threw all in one big pot and simmered over medium heat until it looked done. I am going to be making this ALL THE TIME!
