I am a mother of 2 wildly rambunctious boys and one lovely preteen daughter. Between them and my job finding time to cook is difficult. I love to try new things and I enjoy making good food people love!

Chicken, because it is so versatile.
My cooking triumphs
I make wonderful chicken empanadas that people seem to gobble up and want more, more more of! I make a pretty tasty chicken casserole my fam adores, and I do love to experiment with cheesecake.

Peanut Butter Candy
This is very close to what my mother made for me as a child. She'd melt butter and mix with powder sugar to make a dough. Then she'd kinda mash/roll it out and spread peanut butter on it and roll it up like a log. Then she'd slice, refrigerate and YUMMY candy is eaten! I will definitely try this recipe, as it is similar but maybe not quite as messy.

Fudge Truffle Cheesecake
This cheesecake is wonderful. I made a regular Nilla crust and used milk choc chips and it is great. I dressed it up with drizzled white and dark choc and choc covered strawberries! It is a firmer cheesecake. I think that people that had dry, cracked cheesecake over baked it. Cheesecake is supposed to jiggle in the middle in my opinion. It is still very creamy too. If you like a really soft, pudding like cake it is not for you.

Spumoni Chocolate Chip Cookies
I was looking to see if there was a homemade recipe for these on here. I will DEFINITELY try it! I usually make the Betty Crocker version using the sugar cookie mix. You add pistachios and chocolate chunks and dried cherries to it. I however, improvised that recipe and add also a pkg of dry pistachio pudding mix and use cherry flavored Crasins. This recipe has such great reviews I cannot wait to give it a whirl!
