We will never buy ready-made sausage again. My husband, who is a born and bred country boy, loved it. I used fresh ground pepper and sea salt. I only have rubbed sage, so broke out the mortar and pestle and ground all the seasonings together. I used a quarter-cup measuring cup and made 14 nice sized patties. This one is definitely a keeper! As we say down south...we are in hog heaven!
