Ricotta Eggplant Rolls

Living the low carb lifestyle-this is our lasagna replacement! The sauce is easy and far superior to jar sauce. Based on other reviewers notes, I also baked the zucchini slices in the ove for a few minutes till softened-basted with olive oil and some Italian seasoning. Also added some chopped, uncooked fresh spinach to the cheese mixture, and finally topped with some extra Parmesan cheese before baking uncovered in the oven. Superb recipeM

Good Old Fashioned Pancakes

Normally, don't eat pancakes cause we do the low-carb lifestyle, but had weekend company so decided to make a yummy pancake breakfast. Since I'd not made pancakes in some time, I looked for a recipe online and these were awesome! Lots of flavor and so fluffy - not heavy at all. Only included two small changes recommended by other reviewers - added 1 tsp vanilla to the egg mixture and cut salt down to 1/2 tsp. Used REAL maple syrup and REAL butter. MMMMMMMMM!

Baked Chicken Wings

I just got a deep fryer and this was the first recipe I tried. As previous reviewer, I added 1 tsp onion powder and 1/4 cup of Hot Wing Sauce - gave it just the right amount of heat. Baked for about 20 minutes and finished in the fryer for about 2-3 minutes (depends on size of wings). Shake of salt and fabulous! Serve extra hot wing sauce on the side or ranch dressing.

Six Can Chicken Tortilla Soup

Easy comfort food and fast! You can add almost anything to the basic recipe including left over veggies, but here are the basics. Use real chicken, not canned. Either rotisserie or just bake a couple of boneless chicken breasts rubbed with a little olive oil, salt and pepper for about 20 minutes. Rinse the black beans well. Use 1 can broth and 1 can cream of chicken soup. Add 1 tsp each of cumin and chili powder (or more to taste).

Lasagna Roll-Ups

Fabulous and don't think I'll ever make regular lasagna again. Made it for a baby shower (20 guests) and everyone loved it. Much lighter than normal lasagna - got busy with guests and forgot the mozzarella on top and to tell you the truth, didn't miss it. Really nice, tasty sauce. This is a keeper!
