Cheddar and Olive Balls
I took these to a party and everyone (who liked olives in the first place) really enjoyed them. I should have made/taken more. I added a few dashes of worchestershire and used cayenne instead of paprika. (I like things spicy!) I made them the day before and froze them and I don't know if that's the trick, but mine came out perfectly round with none of the "slipping" mentioned by others. Oh, as written, the dough was a little dry, so I added some of the juice/brine from the jar. Yum!

Chilaquiles II
Great! Just like I used to get in a downtown Chicago diner. My tortillas don't get as crispy as I'd like, but I suspect that's because I use olive oil for the frying. This is easy to prepare, very filling, and has just enough heat to wake you up Sunday mid-morning.

Albondigas Soup I
I'd never had this soup before and couldn't wait to try it once I read the recipe. I did make one big change. I don't eat either pork or beef, so I just substituted ground turkey and kicked up the seasoning a tad. It was great! I will make this all the time now. I figured by using ground turkey the fat gets cut by two thirds. As I am "counting points" on Weight Watchers, that's not something to sneeze at. Healthy, yummy, and filling.
