Chicken Enchiladas II

Made this tonight for Cinco De Mayo and it was really good. I only had dark meat and it still turned out great. I also added some diced red peppers. I will definitely make this again.

Herb Roasted Pork

We loved this. The glaze, with a few suggested enhancements, were excellent. I used garlic powder, salt, pepper and sage on the pork rub. I wound up adding balsamic and I used teriyaki instead of soy sauce in the glaze. I will be making this again ASAP.

Ragu No-Frying Eggplant Parmesan

Just made this tonight and I thought it was really good. I didn't have Panko bread crumbs so I used seasoned bread crumbs and added Parmesan cheese, garlic powder, and some crushed red pepper to the mix. I halved the recipe since I was only feeding 3. I will be making this again!

Awesome Pasta Salad

I added 1/2 of the dressing and refrigerated the salad for a gathering tomorrow night. I will add the remaining dressing tomorrow. I can not stop eating it! It's that good! I went to the deli counter and got provolone and salami cut really thick. It makes it so much easier to cut and cube the cheese/meat.

Peanut Butter and Banana French Toast

Made this last weekend at the Giant's game and it was a huge hit. I added a few chocolate morsels in between the bread and warmed up some real maple syrup. My wife has a secret concoction that she uses for baking that I sprinkled on top...cinnamon and cocoa powder. Make this ASAP!

Slow Cooker Carnitas

This came out great. I took the advice of others and tripled the rub. When I served it we used a soft tortilla and added guacamole, sour cream, fresh cilantro, a squeeze of lime, Pico De Gallo and, some shredded cheddar (it's all I had). Really, Really good. Great flavors and it smelled wonderful.

Slow Cooker Carolina BBQ

This came out great. I too added the liquid smoke and loved the flavor. I tasted the pork as I was shredding it and what a big difference after it cooked another hour! Incredibly Cheesy Turkey Meatloaf

I read through quite a few reviews before making this and didn't have Colby so I cubed up some velveeta and it was really good. I did grate in some garlic and also added worcestershire sauce. All in all and it was a really good recipe. I didn't give it 5 stars because I felt 1 cup of milk was way too much and I had to add a lot more bread crumbs then the recipe called for. I will make this again but with less milk.

Slow-Cooker Corned Beef and Cabbage

This is a really good simple recipe. The only thing I did differently is I skipped the beer. The most important thing about serving corned beef is to make sure you slice it properly (across the grain). Cut it thin if you to want to make sandwiches.

Healthier Broiled Tilapia Parmesan

I thought this was great. I did add panko bread crumbs and baked it for about 20 minutes before finishing it off in the broiler. I like a little spice so I added some Old Bay to my fillet. I just might add some Sriracha to the mayo mix next time!

Greek Chicken Burgers with Feta

I made this tonight for my wife and I and we did like it a lot. She made a home made Tzatziki to go with it and it was really good with the burger. I made the burgers into sliders and served them on a pretzel slider bun (with salt). We will make this again.

Oven Scrambled Eggs

I made these today for my family (4) plus three extra teenage boys and it was great. Really light and fluffy and easy to make. I appreciated being able to throw it in the oven and not have to babysit it on the stove so I could other things (pancakes and bacon). I did add shredded cheddar cheese and shredded mozzarella to the mix. The ONLY thing I will do differently next time is cut down on the butter. It was way too much. Keep in mind you will need more time in the oven then stated. Also, I used a foil pan so I could just toss it and not have to clean. GREAT.

Fluffy Pancakes

This keeps getting better and better. We like to add blueberries and bananas to the pancakes. Made these for my family and three extra teenage boys today and it was great. We love this recipe. I did add chocolate chips to half of the batch. Really good!

Stuffed Pork Chops III

I found two double thick cut pork chops and followed the recipe. The only thing I did was add a little salt and pepper to the outside of the pork chops. It was very moist and flavorful. My wife had a little left over and the dogs were psyched she couldn't finish it. :)

We thought this was pretty good not great. I did not add the extra salt but next time I would add even more seasoning. It had the crispiness and crunch but was a little light on the flavor.
