Black Beans and Rice

I used brown rice instead of white rice. A tad on the bland side so I kicked it up by adding apple cidar vinegar, salsa, cilantro, and diced onion. NOW it's edible. Served with baked chicken...very balanced meal.

Cobb Salad

Sausage Balls

My only advice is to grate your own cheese. Companies add starch to pre-grated cheese so it stays separated and looks pretty. That added starch will hinder juicy & moist sausage balls.

Artichoke Spinach Dip

After cooking I added some green onions that I needed to use up. Also, next time I will add 2 cups of Monterrey Jack cheese. Yummy!!

White Chili with Ground Turkey

Great ground base to get me started. Very bland, though. I like flavorful, full bodied foods. Had to add an array of spices to give it any oomph. A tsp. of cinnamon was a little overpowering. I will only add a small dash next time. And was not spicy at all so my kiddos could enjoy as well.

Crab and Swiss Quiche

Oh, my goodness. We have had this for breakfast, lunch, and dinner. Great "core" recipe where your imagination is the limit. I have added spinach and green onion to this recipe with thinly sliced tomatoes on top. Or I will completely change it up and add bacon and onions with cheddar cheese, instead of the crab and swiss. Also, I have found that the crust cooks more evenly if I put it in my glass pie pan.

Salsa Chicken Rice Casserole

Excellent. I added taco seasoning and big dallop of soor cream to the soup mixture. Put jalepenos and crushed up tortilla chips on table for condiments. Served with salad. Ole!!

Quick Chicken with Asparagus and Provolone

Didn't know asparagus came in a can until I read this recipe...who would have thought? Obviously used fresh and followed directions as written. Always looking for different chicken recipes and this one is a keeper.

Irish Chicken and Dumplings

Made the following changes. Omitted the potatoes. Added 5 chicken boullion cubes to water. Mixed flour in with broth to thicken. Recipe is time consuming but well worth it.

Hershey's ® Chocolate Mousse

FAB-U-LOUS!!!! I added 3 Tbs of chocolate liquer (maybe more!!), but you can use Amaretto, Creme de Menthe, Peppermint Schnaaps, or whatever tickles your fancy. Whipping cream is very fickle, but WILL whip up to the right consistency with patience and the right environment. You HAVE to use a glass bowl (plastic contains oil that will "flatten" the cream). With a glass bowl and beaters fresh out of the freezer, you will have no problem.

Marinated Grilled Shrimp

This is my first experience grilling shrimp. I WAY over-cooked so the shrimp came out very tough. I see the potential in this recipe so today for Father's Day I am attempting again. I will definitely flip the shrimp and pull off grill after only 3 minutes on each side....as suggested in the recipe.

Fruit Pizza I

Another variation to the cream cheese "pizza sauce" is to mix together strawberry cream cheese with marshmallow fluff. Then spread it on your "pizza crust" and add the fruit. Cherry pie filling is very good, also, spread over the top of the cream cheese.
