Chicken Lasagna IV

Easy Quiche

Baked in a 9x11 glass baking dish at 375 for about 40 minutes; it was delicious and perfectly done. I used cooked frozen broccoli, bacon, chopped up ham slices, and sharp cheddar cheese. Added sauted onion and some garlic powder.

Brazilian Black Bean Stew

Really delicious. Made without meat. High school kids liked it very much. I used frozen mango, canned chopped green chilis (mild) instead of chopping a chili pepper, added 1 can of vegetable stock in place of 15 oz of the water, and added cumin, chili powder, and a bit more salt. I quadrupled the recipe for a carnival and used 2 six quart stock pots to prepare. To serve at the carnival, I kept the soup warm in 2 large crock pots. It made about 100 servings and it was completely gone. Thanks for a delicious recipe.

Oatmeal Pancakes II

I added 2 TBSP of brown sugar. Need to double the recipe at least in order to serve 4. Had plenty for two servings. I used regular 2% milk since i did not have buttermilk on hand. Mixed everything up in food processor. Let the mixture sit for about 5 minutes before cooking. They were fluffy,very easy and good. I would make these again.

Cheesy Scalloped Potatoes with Ham

It would be 5 stars but I feel that the baking time is too short. Very delicious and we all liked it. If you would correct the baking time, or give instructions to boil or microwave the potatoes first (easy way: slice them in a food processor so they are very thin, and microwave for about 15 minutes while you make the sauce), it would be a 5 star recipe. Thanks for a great recipe!

Lime Chicken Soft Tacos

Made changes: This was great in the crock pot. Cooked 1.5 lbs. of chicken in the liquid (with increased red wine vinegar/lime juice to make about 1 cup) and added cayenne and cumin. cooked on low about 6 hours, shredded chicken in juice, added cilantro and cooked sliced onions/bell pepper. served with guacamole and green salsa.

Baked Chicken

everyone liked. used boneless chicken tenders, marinated in buttermilk and lemon for an hour, then coated with cracker crumbs. baked uncovered at 400 for 10 minutes, then covered at 375 for about another 10. 5 more minutes uncovered. Good sauce, thanks!

Beef Stroganoff III

Oh wow, this is really good! Changes I made for what I had on hand: used leftover eye of round roast made in slow cooker; used about 1/4 of a white onion; omitted wine but added 1 TBSP Worc sauce and 1/4 cup sherry; sauteed garlic with mushrooms and onions; mixed flour with a little cold water before adding to prevent lumps. Thanks for fabulous recipe!
