Mile-High Banana Cream Pie with Chocolate Pastry

A first time effort in making a Banana Cream Pie--glad I chose this recipe. The chocolate crust was different and delicious. I'd use in other pie recipes. But we couldn't wait 2 hours to dig in and the pie "ran", but the next day ---wow.....It was perfect. And not too sweet. It will be The Birthday Pie for my husband from now on.

Quinoa and Black Beans

A great way to use Quinoa. I doubled the amount of Quinoa, adding 3 cups of veg. broth, used 1 can of black beans and lots of fresh cilantro. Watch out for the salt - you may need no extra if the veg. broth is salty.

Mini Parmesan Scones

Tasty, but a little tough, maybe using no High -gluten flour next time will help. They froze well, and popping one in the toaster oven with dinner is a great convenience.

Baked Oatmeal I

This is a great variation to plain oatmeal breakfast. I cut back on the oil by 1/2 and added a bit more milk, so it wouldn't be as dry...and I'd like to try chopped apples - a recipe I will always keep handy.

Asian Beef with Snow Peas

I have made this several times--easy-quick--not many ingredients! And it tastes Chinese. I did use 1 T. mirin and 1 T. rice wine vinegar. Also doubled the amount of cornstarch. Cutting the beef partially frozen is easier--but you all know that trick!

Spiced Pickled Beets

I used fresh beets from my garden, steamed them until tender, then put them in a large bowl of cold water, and had no pink fingers by peeling them underwater! Otherwise my hands turn beet red! I also used one of those rippled french fry cutters to slice them - a simple hand held tool. I canned some in pint jars (made 4 pints), and will enjoy beets in the dead of winter. This recipe is tasty- just the right spice mix.

Rhubarb Cherry Pie

When strawberries are not quite there but the rhubarb is abundant -try this ! I altered the recipe by using 3 cups of rhubarb, 1 T. tapioca, and 1 t. cornstarch . If you like it sweeter, use a full cup of sugar. I also made a crumb crust -- cut 1/4 cup butter into 1/4 c. sugar mixed with 1/2 c. flour, and stir in 1 yolk. A very easy and great way to use up that can of Cherry Pie filling !
