Korean BBQ Short Ribs (Gal-Bi)

Amazing - and I did it without a BBQ or grill. I only made one substitution: replaced the water with Coke at the suggestion of a friend who makes these all the time. Then marinated for almost 24 hours, braised in a dutch oven at 300 for 4 hours. Removed the ribs, strained, defatted, and reduced the liquid. Brushed it back onto the ribs and broiled for 5-7 minutes per side. First time ever making ribs and it was a knockout.

Parmesan Roasted Acorn Squash

Andrea's Pasta Fagioli

Loved this - didn't have tomato sauce so I used 1 can of petite diced, and 1 box of strained crushed tomatoes - also didn't have navy beans so just added a second can of cannellini beans. Flavor was great and will make again.

Chicken Tortilla Soup V

Followed recipe exactly and it was light and tasty - would probably increase the corn, or add black beans next time to give it a bit more texture. Topped with tortilla chips, sharp cheddar and cilantro.

Delicious Raspberry Oatmeal Cookie Bars

Great recipe! I only had dark brown sugar on hand, but aside from a deeper brown color - it didn't detract from the flavor. I mixed in the zest and juice of a lemon to the warmed raspberry jam (to cut the sweet a bit), and topped the bars with chopped walnuts before baking - to add a little interest.

White Chili with Ground Turkey

Fantastic soup! I followed other suggestions and doubled the spices (cumin, cinnamon, cayenne), added a can of corn (no sugar/no salt), and half of the cheese. Also, couldn't find ground turkey so used ground chicken instead. Loved it.

Dilled Sole with Almonds

The cornmeal wouldn't really stick to the fish so dipped each piece in an egg wash and recoated. Worked great! I also added another tablespoon or so of dill to the pan while making the almond topping. This is a great recipe on almost any standard firm whitefish. I used Nile Perch and it came out fabulous.

Spanish-Style Quinoa

This was great...I made stuffed peppers as suggested in the reviews. The only change was that I mixed in some shredded pepperjack cheese and half a can of corn right before stuffing.

Quinoa Side Dish

This is a great basic side dish that lends to a lot of additions, if wanted. I used olive oil instead of butter and threw in a few sliced mushrooms at the end. The lemon juice is almost a must as it really brings out the thyme.

Quick and Easy Sauteed Spinach

I followed other reviewers and replaced the garlic salt with a clove of fresh minced garlic, sauteed a bit before adding the spinach. Watch the salt, though...after it's all concentrated and wilted down, the few turns of ground salt I added was a bit too much. It was easy, tasty and fast...will definitely make again.

Roasted Okra

I like okra and this was a pretty good method, though some pieces came out overcooked and were inedible (like tough straw) even though everything was pretty uniformly cut. Great flavor and will try again, taking them out at 10 mins instead of 15.

Lebanese-Style Red Lentil Soup

I needed to add extra chicken stock as this dried up pretty fast while simmering...the ratio was closer to 1 cup lentils to 4 cups broth. I added the cumin to cook with the onion/garlic to get it in a bit earlier and also left out the cayenne and cilantro. Great soup and will make again!

Asian Coleslaw

Wow. This was fantastic. The only change I made to the dressing was subbing olive oil instead of veggie, and using unsweetened natural PB. I let it sit for about an hour before pouring over a salad made with whatever I had on hand...red cabbage, orange bell pepper, sugar snap peas, green onions and cilantro, all sliced thin. I also toasted a handful of slivered almonds and tossed in right before serving. Amazing. One of the best recipes on this site.

Grilled Eggplant, Tomato and Goat Cheese

Great recipe, but I completely forgot the balsamic vinegar. Still works without it! I don't have an outdoor grill, so I used my George Foreman...first grilling the slices of eggplant and tomato separately, then assembled the stacks in a shallow baking dish, drizzled it all with olive oil and chopped basil, then popped into 400 degree oven for 5 minutes to let it all melt. Great side dish.

Asparagus Side Dish

Great side dish, but like others, I cut the steaming time almost in half, and only used a drizzle of olive oil after draining. Will make this again...maybe next time with slivered almonds added with the parmesan.

Best Big, Fat, Chewy Chocolate Chip Cookie

I never thought I'd say it, but I had to cut the chips to 1.5 cups the second time I made these, and they're still super chocolatey. Also, I use a cookie scoop that's about half the size of the recommended 1/4 cup, and bake for 14-15 mins. They're best eaten within a day or two of baking as they went crunchy pretty easily, even in tupperware.

Easy Fried Eggplant

This was great! I removed the bitter juice beforehand by heavily salting the slices and letting them sweat for 30 mins, then rinsed and dried before dipping into the egg. For a fun variation, I added a tablespoon of curry powder to the breadcrumbs, and mixed plain yogurt with ground coriander to serve alongside as a dipping sauce.

Gourmet Mushroom Risotto

A great staple in my recipe box. It always takes about 2 more cups of broth to get it cooked through. Also added a few handfuls of chopped spinach with the mushrooms at the end so it wilts slightly. Enough for a meal on it's own!

Baklava

First time making baklava...was a lot easier than I thought. I used half walnuts, half pecans, all chopped pretty fine. I did overcook the syrup a bit and after everything had cooled, it was very sticky but still tasty.

Pizza Pinwheels

I was worried about the technique as I never had much luck working with pastry dough of any kind, but I followed the recommendations to freeze the tube for 15 minutes before working with the dough, then chilled the rolls overnight before slicing and baking. Quadrupled the recipe for a party of 30. I made half with diced pepperoni and mozzerella, and half "veggie" with marinated artichokes, minced garlic, chopped black olives and mozzerella. Served with pizza sauce to dip and this was the first dish gone at the party.
